That's kinda what happened actually, during an interview Gordon did on the Mythical Kitchen youtube channel they talked about that sandwich and Gordon said it was his media manager's (or publicist, I don't remember) fault, they told him it looked great and was going to be ok, Gordon wasn't sure to post it but they did anyway

He just seemed VERY rushed in this video.
honestly he could have used the exact same cheeses and just grated them, mix em together, cut that bread to about half the thickness of the slices, and done it on the stovetop over medium low without the kimchi and it would've turned out perfectly fine. maybe trim a bit of the edges off the bread near the sides going in contact with the pan so that the crust doesn't keep the bread from pressing on the surface.
Korean here. Grilled kimchi and cheese toastie absolutely slaps. add a little gochujang (Korean chili paste) to the kimchi and fry that on the pan first so the moisture from the kimchi doesn't soak through the cheese and bread.

22:08 to answer Alicia's question of why would Gordon post this video? Gordon did a series called Ramsay Around the World where he travelled to other countries and cooked their local cuisine. For example, his very good Nasi Goreng (Indonesian fried rice) came from this series when he visited Indonesia. I think Tasmania didn't really have an "iconic dish" in this same manner, so he did a grilled cheese with local ingredients instead as a sort of placeholder. I think he acknowledged he knew it wasn't good. Thus, I think he probably only posted it to be able to justify the expense of the trip to Tasmania. Edit: yeah, just went back to the original video to double-check. The concept of the Tasmania episode was Gordon stayed at the house of a local cheese maker, so this sandwich was intended to spotlight their cheese. I do think the flavors of the rustic bread, the pepperberry and assiago cheeses, and the kimchi would have made a delicious hor d'oeuvre, framing it more as a cheese toast. But because he called it a "grilled cheese", we're all evaluating it on a different mindset.

for anyone who's curious: American cheese is just a cheddar blend with an emulsifier added. the reason it melts so easily is because chemically it contains more water than other cheeses and because it is an emulsion, the oils don't separate out of it when it's heated, like other cheeses.
Legal definition of non processed cheese, but still cheese, it just has to be called processed cheese because it has additional ingredients that change it's properties for melting and stuff.@@apexprimebest
Good American cheese is technically a process cheese but looks and feels just like others hard cheeses and is quite good. There’s also versions of American cheese that are process cheese food such as “Kraft Singles” which are an artificial looking softish cheese that has a high amount of added water and/or oils whose slices are individually wrapped. I don’t think they taste bad but they are a different beast, more of a cheese flavored product than cheese.

If you have never tried it, tips for a good grilled cheese. 1. Toast the inside of the bread too, the oil from the cheese will have a harder time getting into the bread and it will not get soggy. 2. I recommend Colby and Edam cheese for a good flavor with a creamy cheese pull. 3. While the cheese is in the sandwich and cooking toss a lid on to steam it and get the cheese fully melted. 4. If you want something extra put a little garlic powder in the butter before to toast the bread it will add another layer to your flavor.
Something to add: if you are going to do the lid, try cooking the sandwich open-faced, with cheese on both sides. You can get in double the cheese, and since the cheese is exposed to the heat directly, it will melt faster. You can also toss a tiny bit of water at one edge of the pan before putting on the lid and the steam will accelerate melting even more (but only if you have a pan where the water will stay put, don't want it sliding over to the bread)
I've heard good things about using Gruyere for a nice gooey grilled cheese, if you're going fancy with it. Though I haven't gotten the chance to try it for myself yet.
Seconding 4. I sprinkle seasonings on the buttery side *all the time* before cooking it, and have never looked back. 💕 It's also a super easy way to get creative with flavors as well if you're not interested in experimenting with the cheese.

If Gordon was served his 'Ultimate Grilled Cheese' on one of his shows he would throw the plate at the wall when he went back to the kitchen. It's burnt _and_ raw, and has a clashing flavor profile. Also, he spoke of adding kimchi for the acidity, but the cheeses he used were aged, sharp cheeses. Aged and sharp cheeses are acidic, so adding kimchi for acidity is overdoing it.
Also: The only way I've ever messed up a grilled cheese is if I couldn't get the cheese to melt right. Still a good sandwich though. And I love to add garlic on mine, like making the two slices of bread into garlic bread and putting the garlic on the inside of the sandwich against the cheese. Also also: For anything that grills or toasts the bread... Give me Brioche every time. There's a brand that sells sliced loaves of brioche. SO good. Cheddar, brioche bread, butter and garlic, and lots of times some tomato soup on the side.

The difference is between actual american cheese, and american "Cheese" that is often called the same thing but is not. In America there are many brands of pre-packaged brands that call it "Pasteurized Processed Cheese Food" it's a "Cheese Food" not actual cheese. Or worse, "Pasteurized Processed Cheese Spread"... "Cheese Spread", not actual cheese; it still comes pre-packaged in slices, but it's absolutely foul and leaves a nasty residue on the roof of your mouth.
Cheese : My grill cheese, butter bread and cover in parm shredded cheese, toast it in oven til butter melted. Then in middle, slice of cheddar cheese, Munster cheese, American cheese and Havarti cheese. Now added some bacon on one side and toast it til cheese melt and bread toasted, then fold to make sandwich. I do add Ranch into mine but each their own.
I went to a fancy restaurant in the Philadelphia area and they had cheesesteak on the menu. One of my favorite foods, so I ordered it. What came was 2 slabs of steak with some fancy cheese on brioche bread. No no no!
When we said "watch Uncle Roger reviewing Gordon as a palet clenser after all the Jamie Oliver BS" we didn't mean this one 💀 To be fair to Gordon, this was done quickly and under pressure from the producer with what they had on the set. He did later acknowledge publicly that it's bad. Highly recommend you watch Gordon's Fried Rice and some Chef Wang Gang- he's a professional Chinese chef and watching him make food is like watching ballet.
I have to say, one day I had a little bit of kimchi left but it was too little to use it for a big dish and I never eat it as a side dish.. and at that moment I remembered the meme sandwich, so I actually did it. These are acceptable cheese types. Also Monterey jack, American, or even mild cheddar. Perfect for days when you are sick or it's cold and you don't want something too complicated or hard to chew. Also easy to clean up, no bones or remains, just crumbs and only one mildly dirtied dish, not even a dirty fork.
There are two kinds of Grilled cheese: 1)Grilled cheese sandwich, 2) American Grilled cheese. The second one is cheddar(plastic) cheese and white bread. The first is whatever you like so long as the cheese is melted and the bread toasted. Simple.

A nice grilled cheese paired with a hot soup is such comfort. It's not really something that needs to be all fancy, though I will say that using mayo instead of butter for cooking the bread really does elevate it, and I say this as someone who don't like mayo. It lasts longer than butter, has a higher smoking point so harder to burn, and helps any seasoning you add to the bread adhere way better. Also, poor Alicia's mom took psychic damage from that alleged butter chicken. Also also, Taka jumpscare was great. Lastly, don't have faith in chat. We enjoy schadenfreude way too much.

I’ve found a new way to make grilled cheese. Do as Roger says and toast both side of bread so that the cheese starts to melt, but then flip the cheese directly on the pan until it starts to sear. Then combine with the other half of sandwich. The cheese pull is amazing.

I once made a kimchi grilled cheese when looking up Canadian food. like in the us diasporas combining elements tends to be rolled into local conceptions (food bloggers are a different breed from industry they love the closest attributions). I don't however agree with just calling it the ultimate grilled cheese. you need a melting cheese blend (American, velveta, swiss, etc) and if you add other elements they are modifiers on name, a loaded grilled cheese is the bare minimum descriptor.

Good American cheese is technically a process cheese but looks and feels just like others hard cheeses and is quite good.
There’s also versions of American cheese that are process cheese food such as “Kraft Singles” which are an artificial looking softish cheese that has a high amount of added water and/or oils whose slices are individually wrapped. I don’t think they taste bad but they are a different beast, more of a cheese flavored product than cheese.

If you have never tried it, tips for a good grilled cheese.
1. Toast the inside of the bread too, the oil from the cheese will have a harder time getting into the bread and it will not get soggy.
2. I recommend Colby and Edam cheese for a good flavor with a creamy cheese pull.
3. While the cheese is in the sandwich and cooking toss a lid on to steam it and get the cheese fully melted.
4. If you want something extra put a little garlic powder in the butter before to toast the bread it will add another layer to your flavor.
Something to add: if you are going to do the lid, try cooking the sandwich open-faced, with cheese on both sides. You can get in double the cheese, and since the cheese is exposed to the heat directly, it will melt faster. You can also toss a tiny bit of water at one edge of the pan before putting on the lid and the steam will accelerate melting even more (but only if you have a pan where the water will stay put, don't want it sliding over to the bread)

I've heard good things about using Gruyere for a nice gooey grilled cheese, if you're going fancy with it. Though I haven't gotten the chance to try it for myself yet.
Seconding 4. I sprinkle seasonings on the buttery side *all the time* before cooking it, and have never looked back. 💕

I love showing people the Gordon Grilled Cheese video. Everything starts off looking like it's just fine, and then it rapidly dissolves into chaos.
If Gordon was served his 'Ultimate Grilled Cheese' on one of his shows he would throw the plate at the wall when he went back to the kitchen. It's burnt _and_ raw, and has a clashing flavor profile. Also, he spoke of adding kimchi for the acidity, but the cheeses he used were aged, sharp cheeses. Aged and sharp cheeses are acidic, so adding kimchi for acidity is overdoing it.
Anybody else remember the Alexa commercial where Gordon tore into a guy over trying to look up the "recipe" for a grilled cheese?
Also: The only way I've ever messed up a grilled cheese is if I couldn't get the cheese to melt right. Still a good sandwich though.
And I love to add garlic on mine, like making the two slices of bread into garlic bread and putting the garlic on the inside of the sandwich against the cheese.
Also also: For anything that grills or toasts the bread... Give me Brioche every time. There's a brand that sells sliced loaves of brioche. SO good. Cheddar, brioche bread, butter and garlic, and lots of times some tomato soup on the side.

The difference is between actual american cheese, and american "Cheese" that is often called the same thing but is not. In America there are many brands of pre-packaged brands that call it "Pasteurized Processed Cheese Food" it's a "Cheese Food" not actual cheese. Or worse, "Pasteurized Processed Cheese Spread"... "Cheese Spread", not actual cheese; it still comes pre-packaged in slices, but it's absolutely foul and leaves a nasty residue on the roof of your mouth.

Cheese : My grill cheese, butter bread and cover in parm shredded cheese, toast it in oven til butter melted. Then in middle, slice of cheddar cheese, Munster cheese, American cheese and Havarti cheese. Now added some bacon on one side and toast it til cheese melt and bread toasted, then fold to make sandwich. I do add Ranch into mine but each their own.

Grilled Cheese: 2 slices Muenster Cheese, 2 slices Provolone, and 2 slices Smoke Gouda. Butter the exterior of the bread, make sure you've got a hot skillet, browning on both sides. Put a lid on the skillet if you want the cheese to melt faster.
Also make certain to make Tomato Soup for dipping sauce, and cut the sandwich diagonally across for better dipping.

A nice grilled cheese paired with a hot soup is such comfort. It's not really something that needs to be all fancy, though I will say that using mayo instead of butter for cooking the bread really does elevate it, and I say this as someone who don't like mayo. It lasts longer than butter, has a higher smoking point so harder to burn, and helps any seasoning you add to the bread adhere way better.
Also, poor Alicia's mom took psychic damage from that alleged butter chicken.

Dear, Alicia.
Please understand that as you watch all of these ENGLISH/UK chefs that they have lived most of their lives without flavor and with the bare minimum resources. There is a reason why they feel that "Beans on Toast" is good food. Everything from post WW2 rations, to being the country furthest away for the silk road and spices. The constant wet weather that ruins the ability to, historically, save good food.
That he would do that to grilled cheese... when it is a simple:
2 slices of store bought wheat/white/sourdough bread, covered in butter with a 3 slice mixture or any of the following:
Provolone (personal favorite due to the melting texture and the ability to add seasoning during or a condiment AFTER cooking)
American
Cheddar
Motz (processed slices)
Pepper jack
Gouda (Processed slices)
Munster (Processed slices, normally 1 with other cheeses)
AND I'M AWARE, that is OVER-COMPLICATING it right there. That should be the Gordon Ramesy level of grilled cheese. Nothing beyond that.

I have personally experimented with various breads and cheeses and I swear on my life the BEST grilled cheese you’ll ever eat… two pieces of cheap ass white bread, one slice of plastic orange Kraft single and butter the outsides with cheap ass margarine. Toast the shit out of it in a HOT pan. That’s it. Perfection. Gordon was out of his MIND on this one. If it takes you more than 5 minutes TOTAL, you f*cked up!

I’ve found a new way to make grilled cheese. Do as Roger says and toast both side of bread so that the cheese starts to melt, but then flip the cheese directly on the pan until it starts to sear. Then combine with the other half of sandwich. The cheese pull is amazing.

I once made a kimchi grilled cheese when looking up Canadian food. like in the us diasporas combining elements tends to be rolled into local conceptions (food bloggers are a different breed from industry they love the closest attributions). I don't however agree with just calling it the ultimate grilled cheese. you need a melting cheese blend (American, velveta, swiss, etc) and if you add other elements they are modifiers on name, a loaded grilled cheese is the bare minimum descriptor.
To the people saying this was a troll video, this was filmed during one of his Natural Geographic travel shows. I 100% guarantee this was the producers handing him stupid shit.
