Isn’t it more important to think about the capacity of the piece left to deliver checkmate, than whether it is more valuable when choosing between the rook and the bishop? (In the first example.)
Previous lesson covered mating the lone King so perhaps this is why it wasn't covered in that manner but I do think it would have been worth a mention. These videos are amazing though and the information is fantastic.

Well, You cannot give checkmate with only bishop and king as pawn will get exchanged
