The lentil meatballs were so good! My picky teen even liked them. I did add some extra oats, because I misread a direction; that was my user error. Lol. Used a cookie scoop to place on a parchment-paper lined baking tray and baked 30 minutes. Yummy!

We all seem to get the concept of a specific diet, and we all seem to have an understanding that substitutions can be made for those on a different specific diet.... but somehow Laura shows these substitutions or alternatives better than anyone else, giving those of us without this talent lots of options we didn't know we had. Her meals really showcase alternatives with what seems to be only one agenda... various, doable, and healthy options for you and your family, based on what works best for you in all factors of diets, budgets, needs, and accessibility.

I watched this when it came out but I came back to follow the meatless meatloaf recipe, I made meatballs instead. I used bread crumbs instead of oats and they were really good!!! I’ve made them in the past and they weren’t good!! Thank you for sharing!!!

We just made some taco thing out of leftover corn on the cob, taco seasoning packet from Aldi, Salsa from Aldi on sale, onions from garden, taco cheese, kidney beand. We made it in the crockpot. Put fried hamburger in it too. It can be a dip, put fritos and lettuce in it, use tostilla chips, burritos or tacos. Man it is good! Just using up stuff and who knew! This would be fun for a night with company. Taco night.
We like cooked hamburger in both lentil soup and barley soup. Even just adding 1/2 lb adds great flavor and protein. Great ideas. Thanks for sharing. Debi in Vicksburg, MS. 🥰🥰

I was bad the other day. I should’ve stuck with not going until I checked out my food pantry before going to the store for my produce. The food pantry that is usually around this time has produce. I should’ve not stocked up on all of my perishable foods. I could’ve waited on milk until later. It’ll be okay. The only thing I could’ve waited on was grabbing the chicken sausage from Aldi. I really like those over the other sausage ones with cheddar brats. While at Aldi I saw that my location has the dirty rice boxes and some other flavors which I wanted but changed my mind on them. I’ll get them next time. The one thing I could’ve waited on was the caramel protein shakes. Some reason those don’t bother my stomach while the name brand ones do bother my stomach. Cool idea for zucchini in chili.

My husband cannot have eggs so what would another substitute for the egg in the meatloaf. I got your meal planning book and plan on using it Monday when I go grocery shopping.

@@LauraLeggeWFPB stands for Whole Food Plant Based. It’s basically a very clean way eating plant based, no processed foods. You can google it and go down the rabbit hole 😅
WFPB is similar but different to vegan, but I always have to remind myself of the subtle differences. For example, WFPB doesn't used processed foods, oils, etc. but might use an animal byproduct like honey - these two examples differ from a vegans diet. I use an article by Brian Wendel at Forkoverknives to help give me a better understanding of these differences.

Enjoy your channel. We eat a lot like this. It is just me and my husband now. By not making your kids eat food they do not want will open the door for them to eat it later. My kids I never made eat anything. Never made food an issue. They all eat everything now. Accept my one son who is on diet restrictions due to health reasons, kidney.

My daughter, when she was little, had to have each item on separate plates. She’s grown now but still keeps all her food separate and eats one thing at a time.
I would love to see a high protein meal plan that is both dairy AND gluten-free - I am both celiac (so no gluten) and have an anaphylactic dairy allergy... You would not believe how hard it is to buy food that is both gluten-free AND dairy-free!
@@charlottetooth1457 I just put the pencil down from writing my next high protein meal plan and it’s going to be dairy free and I believe naturally gluten free (I have to check 1 ingredient and see if it’s gluten free) It was my most challenging meal plan yet because I didn’t want to lean too much on meat and I normally depend on dairy quite a bit to add more protein. But everything I’ve written is going to be delicious so I’m excited to start cooking!! 🤩 I can’t wait to share the video when it’s all done
I've heard that too much raw spinach can cause gout put that cooking it can take the danger away. So I guess my doctor says less Ross spinach more spinach.
@@jemrose104 haha yes!! It also can heat the water to just the right temp for making bread or I can ask it to warm up the water for the kids to wash their hands and it knows exactly what temp to set for the kids. It’s really neat!
