I think that's because Catherine Parr was deliberately not portrayed as a late 20-something in this show. Her age isn't mentioned and the show wasn't necessarily historically accurate.

Or maybe he's simply jealous he's painfully slowly dying of old age & sickness while his wife is all youthful & pretty with marriage prospects showering her before she's actually widowed.
