You can use romaine lettuce. cook is for about 10 seconds, put it in ice water, drain them and dry them with paper towels and stack them up to a sheet, tastes incredible!
If you're a vegan, then sea vegetable is more of a must than regular fish-eaters. They contain iodine, and some DHA, which can't be found in any other vegan food. Omitting sea veggies could mean thyroid problems later on.
