As this was a sample practice test the students had been asked to make notes on a separate piece of paper, (looking carefully you will see that they slide the notes underneath the pictures at 2:59 and 4:44) and are not reading as they have chosen not to see their notes. Both students are, however looking intently at the pictures and recalling what they have written. In a real exam the students are not allowed notepaper (for security) and must make notes on the pictures. If, during the real exam the student attempts to read directly from his or her notes, the interlocutor would then interrupt and, in a friendly way, ask them not to do so.
I'm pretty sure it's an issue of microphone placement and of mostly the reverberation/acoustics of the room itself. I didn't really have a problem with the accents.
80% of English speaker have a kind of accent, if they don't speak the standards(Oxford or General American). They use different words for same things (old-new, Old English-or French/Latin origin, local word etc etc

Both participants spoke very unclearly, or just the sound was bad on the video?

I wonder how yours sounds when being in a stressful situation. (knowing that you're being recorded doesn't help either)
