The special hot pot looks good! I prepare squids/calamari the same way (blanch in hot boiling water then strain under cold water). The herb is curly parsley, the one you like (there are 2 types curly & flat Parsley). I haven't seen milk fruit since I was a kid in Khmer. Happy holidays!
