That liquid dropped in the milk is an extracted culture, which lives in the top layer of a calf's stomach. I know it could sound gross, but that is the only way to get it. The crushed wheat is first needs to be fried for a short time on a frying pen, that's how it's getting that nutty taste, it's the same process as coffee beans or cocoa beans go through. 6:12 is an actual pear, not an apple.

This cheese is popular across Europe too. It's called Topfen where I am from, Quark in Germany etc. But I have never seen anyone making it at home. I actually quite miss it here in East Asia
