      Hey Yusuf! It's Sepehr from Iran. The same is cooked here before nowruz but called Samanu and also called Samanak in Afghanistan.

    It's so interesting to me how different countries can have such similarities in very specific dishes.
    There's a verrrry similar dish in Iran as well called "Sámánu" also made near nowruz or the persian new year.
    It has be stirred for more than 10 hours, and its made with almonds and wheat flour.
    I love how this channel shows how us as ppl can be different and yet have so much in common.

      I think it's amazing that we get so much spotlight on many unique cultures. I think this makes the food eating experience a lot more enjoyable.

    “sumalak” reminds me of an Indonesian/Malay sweet called “dodol”. it has the same brown colour, but it's dense like toffee and made out of coconut milk and palm sugar instead. the cooking process is also very similar, with the huge wok and constant stirring; it takes hours and so much labour. people here usually make dodol to celebrate Idul Fitri holiday. i think it's always interesting to find something similar from two different cultures.

      We call that matamis na bao. We use brown sugar or coconut sugar for the sweetener. A special version I like has pili nuts in it.

      That brings so many memories. I remember my uncle would put dodol in banana leaves and I'd eat them fresh. Very sweet and sticky, but the taste is so unique.

    I love how people gathered together to share the food. It's life "fiesta" here in the Philippines where we go house to house to have a taste of our neighbor's cooking. This tradition should continue for generations to come.

      Yea, there is always a painstakingly long food to make just to share to people, like Léchon here in he Philippines and other former Spanish Colonies which can take hours if you do it traditionally

    I was in Kazakhstan twice during college in a remote village and it was wonderful to see people so close, yet still so different village to village! The work ethic is true to what was seen here. No complaining, just coming together like it's just expected and what you do! Bless you for showing Uzbecks sharing this wonderful once year event!

    I'm not Uzbek, I'm Bonsian but those stirring ladies remind me of my grandma that lives back home in Bosnia, and I miss her very much. Please do a video in Bosnia! There's so much different foods and styles that you can literally go from town to town and the food will be completely different!

    As Uzbek guy i can add few facts about Sumalak.
    1. People mostly cook that dishes in their houses if they have yard for sure.
    2. You can buy that dish at supermarket (prices are pretty fair for that hard work)
    The next facts would be just my opinion and recommendations :)
    1. Try to taste sumalak after holding it in refrigerator . It gets more thick and tasty
    2. Try to find as thick sumalak as you can. I noticed taste of them significantly better

    Two notes about sumalak:
    (1) The growing seeds produce a set of enzymes (amylases) that can break starch into glucose. By leaving the pot over the night, they are giving time to the enzymes to work on the starches in the wheat flour and produce sugar = sweet. The exact same process is at work in producing beer, except, in beer making, there are yeasts converting the glucose into ethanol. The long boiling of sumalak has the added benefit of killing any organism that can spoil it and make alcohol or acid. Sumalak, like malt extract, is a great source of B vitamins.
    (2) Iranians have the same Nowruz desert, cooked very similarly, and only for the Nowruz. The only difference is it's not given away for free. It's sold. In Persian we call it Samanu ("a" sounding as the "a" in "hat").

    This was so beautiful. Those ladies were so sweet and tough. It reminds of me the old school sugarshacks we have dotted around Quebec. Only instead of sprouting seeds, we tap maple trees; Rather than stirring a pot of starchy water into a creamy caramel, we boil the sap down to syrup... It's amazing how cultures a world apart, in Uzbekistan and Northeastern America can be so similar. Here we revere pork like the Uzbeks revere their Karda-sheep-ian

    That deep color probably comes from caramelisation of the sugar of the grains. Sprouting the grains releases enzymes that help break down starch into sugars. It's well known within bread bakers or brewers. But sugar caramelises at temperatures above 100 degrees celsius, which is why most of it is probably caramelised at the bottom in direct contact with the pan. And slowly, as the water content decreases, the boiling temperature raises until more sugar can start to caramelise. Very cool to see!

    Newroz is a new year festival that originated in the Zagros mountains and nowadays as a Kurd who celebrated Newroz thousands of years ago for the 1st time, I am glad it has been celebrated by people far far away from Kurdistan and Zagros.
    Even that delicious dessert is called Semenu in Kurdish but it seems that one is all over the place and many people from different backgrounds also cook it.
    I love seeing people having common values.

    Navruz or Norouz, meaning “ new day” is the celebration of the begining of the year and spring. This “ Persian in origin “ celebration is observed in many countries. It is not a harvest celebration.

    So basically the long cooking of the flour and wheat starch leads to a hydrolysis of starch into oligosaccharides and disaccharides, hence the sweetness and caramelizing color change.

    When I first saw the wheat sprouts, I genuinely though they were making something similar to Coliva (a Romanian sweet dish that we give out at a burial or when we do a "pomana", which is a kind of remembrance of a deceased relative). And also, as a fun fact... it seems Romanian and Uzbek people have the same word for cauldron: Cazan :D

    Shoutout to the editor for that slick transition from ground level to drone footage at 8:54.
    There are several frames during the start of that transition where Sonny's head is mirrored over the x axis before it ramps to the drone footage...I wonder what effect causes that? You can see if it you pause at 8:54 and advance the video one frame at a time with "."

    Fact: stone actually have 10% minerals salt, everyone remember goat mountain search salt from mountain rock, ordinary rock also have salt but quantity salt actually pretty small especially river rock.

    wow it almost like "Dodol" in Indonesia
    instead we using coconut milk and brown sugar because is typical sweet dessert that use for ceremony like wedding or else.
    but the cook is almost same it took a long time to mix and mix and shouldn't burnt inside until it more thicker than this.
    absolutely good dishes there and the people there.

    We celebrate Nevruz in Turkey too but the tradition is about to die. Not many things happen on the day unfortunately. I remember we would light a big fire back in the day for jumping over it and making food so we can share with other people. .Unfortunately our central Asia traditions are dying quite fast.
