Part of my family was Irish Catholic too. I found out that part of them were Sephardic Jews but were forced to leave and immigrated to Ireland. They had no choice but to be Catholic. I’m a christian as is my whole family but I’m not Catholic. Some of my cousins are Catholic. It would be interesting to see if you have any Sephardic blood in you as there are more than you think in Ireland and Scotland. It was very interesting to me.

Here is a hack for squeezing your lemons that I love: cut off the ends of the lemon as well as cutting it in half. Put it in the squeezer with the the smaller opening facing down. It gets more juice out!!

I love these recipes. Alas, my 87 year old matriarch cannot stomach the RED onions or the apple peels as described in your baby kale salad. I found one trick for the pungent red onions is to put the pre-sliced onions in water with apple cider vinegar. Overnight takes most of the bite, but not flavor!!!! ❤️
Also. Thank you for showing me how to make matchstick carrots. The pre-cut carrots seem to have a smell that can be washed out with vinegar, but, starts to smell moldy again in a few days. 😳

Everything certainly is drool worthy! 🤤 I've got a little tip for you to keep your cutting board from dancing around all over your counter. Put a wrung out paper towel underneath it and it will stop that sliding. A piece of woven shelf liner works quite well, too.

Most of my children are grown now and I thought it would get easier to get so much done, but my youngest has a lot of medical needs so I'm always pretty busy, but you make busy look so easy!!
