Really cool to see how you made your elderberry syrup! I am inspired. They are abundant in my home (Albania) so I will definitely be trying this recipe. I love your content, it makes me miss Alaska--I've visited multiple times and I loved it so much! All of the things your wife makes in the kitchen reminds me of the things my mom did in the kitchen. It makes me sad tho. I wanted my mom to teach me one on one again now that I am 58 of how to can. I remember the basics but I wanted her to give me the tips while she would can. But a yr ago my mom when under anaesthesia to have a knee replaced and she came out from surgery with full blown vascular dementia. I makes me so sad of not being able to do those things again with her 😢

I was born and raised here, where the heck have I been????? I had books for years even. I am coming up on 55, moved to the mountains 3 years ago and I am finally teaching myself. ❤
We kinda had the same mindset this week, I have chicken broth done and taking the last of my carrots off in a few minutes. 33 jars of carrots, canned with just water and salt. 8 qts of dry packed carrots,onions,and potatoes, and 3 qts of dry packed carrots only had open space, so I did 3 qts of water. i live in Big Lake. I've been canning over 52 years
@holdfastalaska just wanted to share, my goal was 1000 jars of food, I ended up getting ill in December, but at the end I got 839 jars of food, or qts of frozen food put up. Only about 40 were blanched frozen veggies, rest were canned.

Thank you! We do about 3 tbsp cacao, a pinch of salt, 1/2 tsp vanilla extract, honey to sweeten. That’s it!

I use soap and hot water; though I do not believe you are suppose to! Then dry well, and re oil.
Corny as it sounds, I use aluminum foil on windows in our trailer to keep out the night sun. Works ok for us!😊

The cabin stays toasty warm! We typically keep it around 70. Even in the hard negatives!
