Ashley is awesome and so is this dish. The only thing I added was a small jalapeño for some heat and a little cold roux to slightly thicken the chili (2 tbls flour and 2 tbls butter).. Cornbread dumplings were one of the best things I've tasted in a while. Great recipe, thank you.
Being a Texan with relatives from Oklahoma to many of the deep South states I love love good cornbread! And really cornmeal and corn flour can be made into so many different types of cornbread that to me I think the variations are too often overlooked such as the hot water method from the Carolinas. I don't have to stay away from wheat but sometimes I do get a little tummy trouble from eating too much of it. I do think one day that some kind if medication will be available for gluten sensitivity just like Lactaid for folks who can't properly digest lactose.
The store was out of rotisserie chickens so I bought the smallest whole chicken & zapped it in the instant pot for this recipe. Turned out great & I had a bonus quart of stock on the side for another day
While I went my own direction with the white chicken chili, I DID try out the cornmeal dumplings on top ... OMG those were FANTASTIC!! My wife was a little offput that my chili was so much better than the one she made a few months ago that came in 2nd at a chili cook-off. LOL
One pot, good ingredients, fairly easy recipe: what's not to love and try next week when we are in turkey/stuffing/potato overload and even leftovers are gone. LOL.
I think the added complexity of freshly roasted tomatillos, poblanos is worth the extra 15 minutes. Prepared salsa is very flat in comparison. How to make the dumplings is interesting. I want to try that.
Would recipes like this, or pot roasts, etc work with a stainless steel pot with a doubled-up foil lid? I want to do that kind of cooking so much, but just don't have a dutch oven (and it's not in the budget).

This recipe is not gluten free as she used all purpose flour in the dumplings. However if you substitute rice or almond flour for the all purpose flour, it can be gluten free.

Great base recipe. Just wing it and add/delete whatever YOU prefer!! 🙌 I make my own version without hominy or corn, because I don't like either! Just how I cook! Look at 4-8 different recipes and then just pull what I like from each.👍 I make this by a vat full!! I use 10 CANS of cannellini beans!!😳😂

She uses all-purpose flour. They still contain gluten.

The dumplings have one cup and a half of all AP flour. The recipe as shown isn't gluten free.

We made it - she thinks the dumplings came out very salty -- hmmmm 3/4 tsp maybe she flopped sugar for salt lolol
