This is a wonderful artisan bread recipe, thank you! It turned out great! I only let it sit for 6 or 7 hours because I didn’t want it to taste sour. I tried a different recipe that I let ferment on the counter for 16 hours and it was too sour for my taste. Thank you for sharing!

How many grams =7 cups of mill flour?
7c flour/ 3 cups water seems to be very low hydration. Will the bread not be too dry??
7 cups of freshly milled hard wheat flour equals approximately 910 grams. If you find your bread is dry, you can always add a little bit more water, one tablespoon at a time.
