I am having 2 major surgeries next week so I have prepped 4 qt size bags of the American chop suey and a 9x9 pan of shepherd pie. My mother’s lasagna recipe always called for cottage cheese instead of ricotta. I recently ate dinner at a friends house, and she made manicotti with cottage cheese that had been blended to be more the texture of ricotta. Cottage cheese has so much protein in it.
My Mom’s recipe used cottage cheese, so that’s what I grew up with. I’ve used ricotta on occasion, but definitely prefer cottage cheese. I will sometimes us half ricotta and half cottage cheese, I like that too
Oh my goodness! I grew up with that stove in the late 70's! My mom's tried and true casserole recipe was scalloped potatoes with ham. I recently found a recipe where you sliced the potatoes (I used golden pots so no peeling) and then you boil the slices for 5 minutes, drain, cool, and then create the casserole. FINALLY the potatoes were done through. That's the secret! It was delicious with seasoned Cream of Celery soup, diced ham steak, and cheese. I've never made that spaghetti bake or that chicken casserole. Totally adding those into my meal planning. Great video! Thank you!

I love this video, the nostalgia and that kitchen!! the recipes are timeless and look delicious!! I grew up with a mom from Naples Italy. So these type of casseroles did not exist. There was always a frittata made with leftover pasta or spaghetti, or even zucchini and onions. Potato croquettes, and Gatto which is mashed potatoes with mozzarella ham and Parmesean covered with bread crumbs and baked in the oven.
Tuna casserole was a favorite of mine as a kid. It was one of the only ways my mom could get me to eat peas. I love peas now but back then no. She used to crush up potato chips on top it was so good. Its like putting chips on a tuna sandwich it had that same flavor and it's still what I use now. I used kettle cooked plain chips now cause they're extra crunchy but it's so good
Sometimes I take it for granted. I still have so many of my relatives and I'm so thankful for that. My Papaw died 3 years ago and he was the first family member that I lost. Heartbreaking.

I grew up eating tuna everything, basically. There were 10 mouths to feed and tuna was economical back then. We had a tuna meal, at least once a week. There was Tuna salad sandwiches, Tuna Noodle Casserole, Tuna Pasta salad, Tuna Patties, and my favorite "Tuna Gravy" over toast. Yum!

I also loved their other dishes and especially the apple crisp they served. I wish I could have those recipes. I just found your channel and thought I'd check it out. I love casserole dishes. In my youth, my mom didn't cook much, in fact I didn't know she could cook until I was a teenager. She was a single mom going to nursing school and working as a nurse so cooking wasn't something she did very often. But one thing she used to make from scratch when she did cook was spaghetti sauce and it was so good. It is now one of my specialties. And my kids love it. I recently became a grandmother for the first time and I cannot wait for my little granddaughter to grow up and enjoy Grandma's spaghetti.
Our family farm has dated appliances as well. The oven always takes longer but it’s worth it to have the get away and peace being there. We always had chicken pot pies as well as Hungarian goulash.
I've never had tuna noodle casserole..I make that same chicken casserole but I melt 1 stick of butter and mix it with 12 oz of the stuffing..put half on the bottom..then the chicken then the cream of soups mixed with chicken broth and a little sour cream then top with the rest of the stuffing..a family favorite
I miss my mother’s homemade chicken and dumplings so much. It’s been years, and no matter what I do, mine are never as good as hers were. I can remember loading my bowl with lots of black pepper. And sniffling the whole time I was eating.😂

And this is where I didn’t like it: she added potato chips as a topping. Not crushed, but whole chips that got limp and soggy. Aside from limp and soggy, I didn’t like hot potato chips. These days, I use panko or ritz crackers. I’m not positive, but I think she got the recipe from the old red plaid Good Housekeeping cook book.
hi Amber. My Mom used to make us when I was 6 baked ravioli with cheese. so good! she did not make it homemade fully but it was one of my favorite pasta dishes. I saw one of your videos where you made ravioli in slow cooker, that looked good and easy to make too.
I never had tuna noodle casserole growing up, but I found a recipe that won my husband's heart. I use tuna in the pouch. The taste is better. I saute a little onion and green pepper and add a diced tomato. When the veggies are tender, add the juice of a lemon and the zest of half a lemon. Take it off the heat and add a couple of tablespoons of mayo. Mix with cooked egg noodles and cover with cheddar cheese. Bake uncovered at 350 for 30 min. Yum!
We had Tuna Casserole growing up but our recipe was a little different. Our recipe came from the Betty Crocker Cookbook and growing up Catholic when we could not eat meat on Friday we had this casserole once or twice a month. We also had salmon patties at least once a month and once a month my parents worked the fishfry at church. This is our version. 12 oz wide egg noodles 2 can of drained tuna 1 small onion, diced 1 can cream of celery soup 1 can milk 1 jar of drained pimentoes 2 cups of sharp cheddar cheese Cook the egg noodles until al dente and drain. Add the tuna, onion, pimentoes, celery soup amd milk. Mix well to combine. Stir in cheese. Place in casserole dish. Bake at 375 for 20 to 25 minutes. Mom always served this with green beans, baby limas or peas.
For me it was Chicken and Dumplings and Spaghetti. For my Mom, it was Meatloaf, and Swiss Steak. I am now making those same dishes for my grandchildren. ❤️❤️

I bet that oven works perfectly and will probably never die. I bought a fairly expensive Fridgidaire about 5 years ago and it has been serviced twice already.warranty long gone it now has no capability to heat past 325 and that takes about an hour to achieve. So at the moment we are a skillet and toaster oven family. That oven of yours looks perfect to me.

We call the chicken casserole "Chicken and Dressing", and most folks I know use cornbread dressing for it. I don't layer mine, though, it just gets all mixed together because I rarely have the patience for layers lol For tuna casserole, I didn't have that until I was a teenager because my mom has a seafood allergy. Had it at a friend's house and her mom covers it with crushed potato chips.

I love the last chicken dish.. The very similar recipe o use us called 'Chicken & Stuffing casserole'. I add a bag of thawed frozen vegetables. I mix soup, sour cream & 6oz mozzarella cheese together. Then sdd that to the dish. Then @ 10 min before it is done, i uncer it, sprinkle rest of cheese on top & cook until melted..

Hi mom always used Extra virgin olive oil she would slice about 4-5 Zucchini and a onion and 2-3 potatoes cut in 6 pieces each and fry in olive oil. In a separate pan she would fry the Italian sausage ( cut in 3 pieces each) drain the oil in the sausage and mix with the Zucchini , then whip 6 eggs together and add to sausage and zucchini and cook till done , sumtime mom would put chili peppers to , let me know how you liked it.

Ricotta actually has roughly the same amount of protein as cottage cheese per half cup so either are fine to use.

Hi mom always used Extra virgin olive oil she would slice about 4-5 Zucchini and a onion and 2-3 potatoes cut in 6 pieces each and fry in olive oil. In a separate pan she would fry the Italian sausage ( cut in 3 pieces each) drain the oil in the sausage and mix with the Zucchini , then whip 6 eggs together and add to sausage and zucchini and cook till done , sumtime mom would put chili peppers to , let me know how you liked it.

my mom's tuna casserole was tuna macaroni and cream of mushroom soup peas and potato chips crushed on top no other items!
