    Ako dati akong kitchen crew ng Chowking. Station ko yan , rice man /backup. Same rice lang ninong yung ginagamit namin, pero pag saing na iba yung measure ng tubig sa rice meal and for chaofan . Steam po ginagamit namin pag saing .

    Ninong Ry, ginagawa po namin sa basmati rice sa hotel hugasam Muna 3 times, tapos soak po mga 15-20minutes, tapos 1 is to 1 Ang tubig.. tapos takpan lng ng foil sa food pan..tapos steam sa oven mga 30 minutes.. para diretcho na di na mag strain stain..hehehe

    Nakakita ako dati ng nagluluto ng fried rice nung intrams namin sa school. May booth ang chowking du'n. They used alamang and oyster sauce pero hindi gano'n karami. Ang weird kasi sobrang babaw nung lasa ng alamang, mas angat sa pakiramdam 'yung baboy at gulay. Pero mas trip ko 'yung seafood fried rice. Konti na lang, putok batok na. Hahahaha! Solid!

    Ung rice na ginagamit specificaly for fried rice is less starchy, less sticky so it is very well dry and perfectly used for fried rice.
    You can also do the same with Starchy rice, it needs with the help of cornstarch powder mixed together to dry out the wetness of the rice

    Kung naalala ko pa eh ang procedure eh. Oil - egg mga 10secs lang hnd dapat lutong luto. Tapos ilalagay ang kanin . Then ung batch meat tapos ang huli ay kangkong haluin sya for 12 secs. Bawat luto namin may seconds un . Di kona nga lang tanda lahat ng procedure

    Gusto ko iyong comment ni Ninong Ry sa Biryani method at kaunting paliwanag sa viral video reaction ni Uncle Roger. Not to diss Uncle Roger pero dito mo makikita difference ng trained chef at comedian. Biryani method is not the "wrong way" of making fried rice, ginagamit pa nga ito sa African cuisines. Maybe Uncle Roger does not know it, pero it seems like he gate keeps on how to make fried rice in Asian way as the "correct way". Whereas, Ninong always explain ung mga methods and concepts of cooking and let audiences to be creative sa cooking process.

    For real na chao fan. I worked there before. Sobrang ma proceso nyan
    Kanin cooked in rice pan. Lalagyan ng egg yellow dissolve in water tapos ihahalo sa tubig ng bigas then luto buhaghag dapat kanin. Then sa pork chao fan 150 grams na minced pork hindi giniling Eh for 6serving to isang lutuan sa wok Then i flash fry yung pork for 20 sec. Sa high pressure fryer. Then kangkong sobrang maliit na hiwa blanched sa sobrang kumukulong tubig for 10sec. Para di mangitim then mga kailngan yung pork 150grams, blanched kangkong 60 grams, 2large eggs, chicken powder 18grams, light soysauce 2tbsp, 1200 grams of cooked yellow rice, oil syempre siguro 1/3 cup. Then game na luto na
    High heat grease the pan add yung 2 eggs haluin ng bahagya di yunh iprrito ng buo basta gnon then after that put the rice next kangkong, pork, c. Powder, light soy. Mixed mixed ng sobra para di masunig asa ilalim and mag pantay yung luto the ln thats it

    I worked as a kitchen crew at CK dati at sa chowfan station ako na assign sa kitchen. Yung meat, ay pre-made na. Ibig sabihin naka pack na sya at ihahalo nalang sa tamang dami. Pde naman any rice ang gamitin. Ang secreto dyan para di gaanong mag dikit2 is yung tubig na nilalagay. Medyo kunti kesa yung pang meal na rice. Then, isa pang dahilan kung bakit hindi dikit2 ang rice ng chowfan is because sa pag luluto. Minsan kahit pang meal na rice and medyo malata, kaya namin buhaghagin yan as much as possible. Press mo yung rice gamit yung laddle pag nasa wok na. Ituloy mo lang hanggang sa kusa na syang bubuhaghag. Yun lang para sa rice. Yung sa procedure naman, mag lagay ng garlic oil sa wok then pag mainit na ilagay ang egg mix. Basically egg na may halong tubig at flour ata yun. After that is yung rice. press2 mo lang hanggang mag hiwahiwalay. Wag lang basta ihalo. Ipress mo sya. Then yung naka pack na meat ilagay mo tas ihalo sa kanin. Pag okay na lahat, lagyan mo nang kangkong then mix. Yun lang.

    ngayon ko lang nalaman yung about sa rice, grabe ng galing , kasi kahit bagong saing yung frinied rice basta malagkit, mabilis sya mapanis eh, tska parang biko yung texture, now i know, dapat pala ganun technique. .

    Sa dami ng Trial and Error na ginawa ko sa pag remake ng pork chowfan ng Chowking. Napag alaman ko na meron siyang Barbecue Sauce at Bagoong alamang na gisado. Sobrang subtle lang ng flavor so dapat konting konti lang ilalagay. hehe yung Garlic pala, hindi mo dapat siya makain sa Chowfan, the flavor is there but the substance must not. isa pa, may sariling flavor yung pork so naluto muna sya with other sauce.

    @Ninong Ry the secret of making fried rice is to keep the rice grain moist inside while crispy on the outside so in that way rice grain will form a layer to avoid sticking. So it's all about the proper temperature and time depending upon the rice variety. If you are going to use sticky rice or high in amylose you should cook it longer and requires higher temperature than the dry rice or the rice with lower amylose content. So you should not dehydrate the rice with a lower amylose variety for too long otherwise you'll get a sandy texture or sometimes you should cover it with a lid when it's too dry to rehydrate and stops dehydration while cooking.
    That's only in my opinion.

    D masyado malalasahan yung Fried Rice sa Chowking, bawing bawi lang ng siomai nila e saka yung pagka burny flavor ng kanin dahil sa pag wok, ni try ko recipe ni Ninong Ry, mas malasa siya kumpara sa Chowking Fried Rice lalo na kapag fresh pa yung vegetables.     Naalala ko dati ang chowfan ng chowking pangtawid gutom pag may lakad tapos kakain sa jeep kasi gusto ko yung spork nila hahaha dabest kahit wlang topiings na siomai pero sauce ng siomai ilagay sa chowfan masarap yun huhu kakmiss
