MAKING OKTOBERFEST INSPIRED SOFT PRETZELS | With a creamy cheese dipping sauce

  • The weather is colder, the leaves are changing colours, it is officially Fall!
    Oktoberfest is a two-week long festival that takes place in Munich, Germany and is known for serving up beer and all the good things that go along with it. For me, that means soft-pretzels. As we have seen on this channel before, there are a lot of things you can do with beer, but nothing beats a soft salty pretzel with a warm cheese dipping sauce!

    🥨 Pretzels
    3 cups water
    2 tbsp. brown sugar
    4 ½ tsp. yeast
    9 cups flour
    4 tsp. salt
    8 tbsp. Butter, melted
    Sea salt
    💧 Boiling Water
    10 cups water
    ⅔ cup baking soda
    🥚 Egg Wash
    2 egg yolks
    2 tsp. Water
    🗺 Directions
    Activate your yeast by combining the warm water, brown sugar, and yeast. Let that sit in a warm place for a few minutes.
    In a stand mixer fitted with the dough hook, combine the flour, salt, melted butter, and activated yeast. Mix on the lowest speed until combined.
    Lightly coat a large bowl with oil, place the dough inside, cover it, and let rise for about an hour or until it doubles in size.
    After an hour, spill the dough onto your work surface and divide as evenly as you can into 16 pieces. Roll each piece out to about 24 inches and fold. To create the pretzel shape, fold the rope of dough into a U shape. Twist the top twice and press the ends into the bottom of the U shape. Place completed pretzels on a baking sheet lined with parchment paper.
    Boil about 10 cups of water and when it comes to a boil add the baking soda. Working one by one, boil each pretzel for 10 seconds on each side. Shake off any extra water and place the pretzel back on the baking sheet.
    In a separate bowl beat the egg yolks and water and brush each pretzel. Sprinkle with a generous amount of course sea salt. Bake the pretzels on 350°F for 15 minutes or until they are golden brown.
    🧀 Cheese Dipping Sauce
    1 tbsp. Butter
    1 tbsp. Flour
    1 cup milk
    1 cup grated cheese
    Salt and pepper
    🗺 Directions
    Over medium heat, combine the butter, flour, and milk and whisk until the mixture thickens. Remove from heat and add the grated cheese and salt and paper to taste.

    🌟 Review and Tips
    1. Measure the cheese with your heart!
    2. This recipe made 16 pretzels (some on the bigger side some on the smaller).
    3. The cheese sauce is best served fresh, but if needed, store it in the fridge and reheat in the microwave when ready.
    4. I started the dough in the stand mixer and finished it by hand.
    5. While you are shaping the dough, keep the pieces of dough and completed pretzel pieces covered. This will help prevent them from drying out.
