However, in general, there is a max player speed of 320 blocks per second because the game is not able to load terrain faster than this speed. Faster travel can be achieved using other methods, however these are much more complicated and have only become more difficult as mojangs updates to the game have made it less optimized. It is worth noting that the 320 blocks per second barrier exists only for players and not other entities such as ender pearls. With mechanisms in place to load the game outside of player loaded area these entities can be transported almost instantaneously.
I believe that if you continue the boat on an infinite path of ice, you will eventually gain enough speed to leave the planet's atmosphere and develop warp speed.
If we actually do the math considering every block is 1m we get that the underwater way is as fast as a Bugatti. But the incredible part is that with the trident you go almost as fast as a fighter plane. Poseidon had the answer all along.

Sure! It is so practical to build everytime a glass tunnel fill it with water and take a dolphin in it! Surely More simple than waiting for a bit of rain
It isn't that hard to make an ice farm now though. Just make some infinite pools with a checkerboard of waterlogged blocks, and add some pistons if you want it to queue up ice. You can even boost the efficiency by keeping a fully automated farm and captive traders with ice and crop trades, and using trading to keep your pickaxe repaired. When you need to cross vast distances, that blue ice is well worth it.
Experiment idea: Make a superflat world out of blue ice and use a boat to see if theres a max speed
Or you could just codemine Minecraft physics, would probably require less effort
