- This stuffed pasta from Sardinia is difficult to pronounce and difficult to make - but delicious to eat! The filling is mashed potato flavoured with cheese, mint and saffron. That's the easy bit; watch very youthful Gaia demonstrate how to make them, with a little help from Pasta Grannies Anna and Clelia.

I’m a midland Chinese my grandma and mom taught me how to make these kind shaped Giaozi dumplings. We use meat fillings and hand roll the little round wraps using a rolling pin one by one. In my generation not many kids know how to make them but I kept this skill I’m gonna pass on to my daughter ❤
So lovely to see old traditions being carried forward by the next generation

I love Sardegna too! Most small towns in Italy have pasta shops, but we filmed this in very rural Sardegna - I don't think there is the disposable income to buy pasta in areas like this? Hence women still make these wonderful pastas! Perhaps you are a regular visitor? best wishes, Vicky

Exactly the same as "hingel" a special meal in the middle of Anatolia here in Turkey. My mother in law makes these for us on special occasions!!

Yes, I live in California. We have a large population of people of Chinese descent. The method she uses reminds me of my friend's dumplings.

They're not always made with tomato sauce. They are the exact same thing as pierogies (to the guy who noticed and commented), only they are so darn difficult to fold. I'm with Nonna. Hahaha. Pinch pinch pinch. Done. Hahahaha. I really appreciate her delicate nature.

What kind of pasta or pastry do you use with potato knishes? They sound very interesting. best wishes, Vicky
2 eggs, 1/2 tsp. Salt, 1tsp baking powder, 2 tbsp oil, not quite 1 2/3 cups of flour I don’t usually make knishes cuz it’s a “patchkah”

We make exactly the same ( idiom) pasta, but we call it Tibetan ZiZi MoMo.

Pasta Grannies I learned to make momos by watching another TH-cam channel - Dickey Dol. She demonstrates how to make lots of traditional Tibetan, Bhutanese, and other Himalayan dishes. I recommend her channel if you’d like to learn more.
Question. So, after rolling out your dough, and cutting your circles, each curligione takes time to form. Do the other circles dry out quickly, or is the dough moist enough?
It was quite humid when we filmed this. To be on the safe side, cover the dough with a cloth or plastic while you make the culurgiones. best wishes, Vicky

I know this is traditionally made with the potato filling but could it be made with maybe a ricotta filling instead?
