  • In this video I do a reverse seared ribeye on the Oklahoma Joe's Rider DLX pellet grill! Now this is on of the best sear jobs I have done and hands down the best I have done on a pellet grill! Now the Rider did a fantastic job with the help of that carbon steel griddle! If you do not have one yet for your DLX, get one NOW! I still haven't figured out yet if the Butcher BBQ "BBQ Mud" made this epic sear happen or if I just got lucky but I will say this was the perfect steak! Wall to wall pink and a spot on medium rare with a super seared crust! Man I have been drooling the whole time as I edited this video!! Thanks for watching!!

      Thanks Rus!! You can tell I was very happy because first off I never used that carbon steel pan yet and that was a disaster waiting to happen!! 2nd when I flipped it over and that sear was that dark I was worried she would carry to a little over done! But when I start slicing I knew I crushed it and man I was giddy!! hahahaha Like always bro thanks for watching and have a great Thanksgiving!!

    I have the same Pellet grill and the Thermometer probes for the meat are way off temp. My hand held meat thermometer were reading 155deg while the Joe's probes were reading 125deg. That steak looks good

    • @DeadBrokeBBQ
      @DeadBrokeBBQ  2 ปีที่แล้ว +2

      Ya I had a temp difference on my also but once you know that you just cook. I have issues with almost every pellet grill I have ran. I am use to them not being accurate and I just deal with it. There is always a hotter spot and cooler spot so in the long run they even out. Thanks for watching!

    Man that looks good buddy! I collect old knives like the one your using. What kind is it? I have a whole rack of old carbon steel butchers. Cleaver and a forge made paring knife my grandma gave me. Her mom used it when my grandma was little and grandma is 98 lol. Sorry love old knives almost as much as cooking meat! Thanks for the video! • @DeadBrokeBBQ
      @DeadBrokeBBQ  3 ปีที่แล้ว +1

      Well #1 because OK Joe sent me the pan and I wanted to add it in a video and #2 using a pan you can control the heat better for the sear and get the whole thing a good balanced seared look. Nice pit!!!

      I planned the whole time to run it up to 115° but miss spoke because I kept saying 225°. The "mud" contains Water, Worcestershire Sauce ,Caramel Color,Salt,Sugar,Molasses,Paprika,Granulated Onion,Yeast Extract,Proprietary Blend of Spices,Xanthan Gum. The 407 rub has onion, and paprika (which my guess is to make it darker). Is there a reason it needs more than olive oil salt pepper and garlic, and then butter for the sear?

    • @DeadBrokeBBQ

    And also a question. Do you loose moisture with a reverse sear verses searing first?

    • @DeadBrokeBBQ
      @DeadBrokeBBQ  4 ปีที่แล้ว +2

      No they still get just as juicy bro and I feel a reverse sear is doesn't put the steak through as much torture!! hahaha Quick and painless typically!! ha ha My main goal is when I reverse sear is that I dry off the outside so they get a good crust so stupid hot is what I try to get the cooker up to!! hahaha Again thanks for watching bro!!
