    When I was a kid, my dad carried a Chicago Cutlery butcher knife on his hip camping. It wasn't an expensive knife, but I can't tell you how many people, from woodsmen to cowboys that asked him to let them check out that knife. After they admired it, he would tell them it was a regular butcher knife and that they could pick one up themselves easily. I think it cost a couple of bucks, but it was gorgeously patinated carbon steel with a oak handle and looked gorgeous and was sharp as a tack. Sometimes the best knife isn't a fancy one.

    This video spoke to me. I find your reasoning for your collecting similar to my own experience. I got into slipjoints through rough Ryders. I’ve got a bunch of them, really like the T10 carbon ones the best, but they’re great. I love that you have that cleaver for outdoors use. Over here in America, the frontiersman and mountain men went into the bush with whatever big butcher knife they had. I love your outlook on knives. I dont have too many knife friends in the real world, so I enjoy talking with ppl on here about collecting, cuz I dont have any other outlets for that. Having said that, I purposely don’t get too involved with any “community” cuz of time, I have other hobbies and family of course. I’ve wanted to make a few videos, to talk about knives in my collection, but I’m not looking for subs or likes or anything, just some cool discourse in the comments sections is all I really care about. But I love how you will collect CRK and rough Ryders and have the same positive thing to say about each. Love your positivity, I hope that is contagious to other collectors, cuz there’s too much negativity in this world, let alone the knife community. I truly enjoy your videos and even tho I’m not a huge presence in the comments sections, I’m still here trying to absorb as much info as I can. Keep doing what you’re doing Paddy. And as always..thanks for sharing

    Agreed brother 🤙 I also agree about Rough Rider knives and I know it might be years down the road but I would be very surprised if some of them aren't worth money. Collectors come in many forms. And a good knife is a good knife no matter where it is made. Iv seen rough Rider have better fit and finish than a knife that cost many more times .Thanks for sharing brother 🤙

    I have found that anything above $75 is past the line of bang for the buck and into diminishing returns. I have expensive knives, but I like those for collector's reasons, not because they are a better quality knife. But 90% of the time, I like to buy Rough Ryders. There's a wide variety of patterns available, the build quality is excellent (particularly the Reserve line) and they are cheap. I don't care about resale value. I don't sell knives. If a knife isn't good for me, I pass it on as a gift. I tossed a fancy Arthur Wright into a giveaway raffle in a knife group because the pull was absurdly hard. I'm sure it found someone with stronger fingernails who would appreciate it. I could have sold it for a hundred bucks probably, but I'm not a dealer, I'm a collector. Buying and selling would take all of the joy out of it for me.

    Hey Paddy, we all need to rant and ramble on days! As far as I'm concerned, you are the owner and user of YOUR knives, so you can sharpen them however you like (with a secondary bevel or not). It all depends upon your own personal cutting needs, time available, personal motivation/philosophy of use/values, available sharpening equipment, etc., etc. The point is, these are all personal preferences. Maybe you would rather spend more time with your family or being outdoors rather than getting a "perfect mirror edge" on your knife! Your knives - your decision, so people should keep such opinions to themselves.

    I tend to keep the original bevel on most of my knives, but if i find the knife doesn't cut well as in the bevel is to steep I'll rebevel it shallower. Great video Paddy

    A very welcome video and interesting rant, entertaining all the same. I remember the back doorstep was my first sharpening stone, worked fine on the Sheffield carbon steel.

    Quite a few Knife Community Myths exposed there Steve, particularly about 'cheap' knives and 'basic' steels. Opinel's Carbone (XC90) and Inox (12C27), and Boker's 440C are probably my three favourite steels irrespective of price because they work well and are easy to live with.

    I tend to use a stone or sandpaper on a block to sharpen my knife. And I tend to hone a knife on the bottom of a ceramic mug. I sharpen my knife for me.
    I watch sharpening videos on occasion. One of these days I might try one of these new fangled sharpeners.
    As for Mora. I think they are overhyped but not necessarily overrated. I agree with you in that they will handle just about anything - at least 90% of the cutting jobs that 90% of the users will ask of it. The thing is... you can say the same thing for numerous comparably priced knives. If you like Moras buy them. But if you're reviewing Moras, don't try to oversell them. Let's face it, The Mora was not Odin's gift to mankind. It's a solid well-made knife that is going to work for most people's cutting needs. And that in itself is high praise enough.
    Also great points on Rough Ryders and other knives in 440A.
    Same goes for C70.
    I gotta tell ya. The tip of the 940 reminds me a little bit of a spay blade. Nice little pre-broken tip!
    I haven't bought a Kancept, but it has nothing to do with place of origin. I'm just overwhelmed by all all the brands popping up everywhere that my head is spinning. Seems like every day I see a new brand out of China. I almost wonder how many of them are just the same company with a new brand name (sort of like how Frost comes out with a new brand name every month or so!)
    I need to get a UKPK but I can and do carry the Dragonfly and it is my favorite carry knife.
    I'm personally not crazy about the modern slipjoints yet at the same time, I think that almost any knife company out there, including, Case, Buck, Bear & Son and even GEC better get on the modern slipjoint train if they want to survive. Same with companies making modern locking folders. I think the C-N-C construction and non-locking blade is going to force to be reckoned with. Think about it. If Case were to move some of their popular brands to C-N-C modern pocket knives, they could improve the quality, lower the cost, and sell them at a higher profit margin. This would allow them to pay more attention and improve quality on selected handmade knives with better QC. These handmade might have to sell out a lower profit margin but the loss could be made up with C-N-C sales. Funny thing is, this is a model the Victorinox sort of adopted years ago. Many of their most popular knives are completely automated from beginning to end with no human touching it until final inspection. Some of these are loaded with tools and options. While others are hand made every step of the way. This is why the Victorinox Huntsman cost less the Compact. this is also why a knife without Red Cellidor handles will cost more than the a knife with a red handle. Their was more human interaction in the production. And in spite of the automation, the staff at Victorinox was not cut.
    Anyway, good Ramble Paddy. Really enjoyed it.

    I don't pay any attention to what the original bevel angle is or was. I run the blade on a steel by feel. Or on a ceramic. Occasionally, I have to actually sharpen a blade by putting a bevel on it by running it on a stone or Dimond plate. Again, I don't care about what the original bevel angles were. I just do it free hand until I get a good edge. Just this morning I needed to touch up edge of my Civivi Clavi, blade is NITRO-V steel. Took it to the kitchen steel about ten passes and it was slicing the hair off my arm. Good enough for me.

    15 minutes in the video and I completely agree ive had some great knives but when I had to sell stuff I thought to myself what are my actual work knives and none of my Spyderco and benchmade stayed in fact I kept my moras and victorinox stuff why cause its affordable and easy to sharpen and they are good steels I don’t care what anyone says id rather have a knife that I can top off an edge on in a couple of minutes

    Hi Paddy. What’s the process for knowing what knives GEC are dropping? I’ve seen you and others commenting on Mike’s knives and it seems everyone knows ahead of times what GEC patterns are on the way to release. I want a GEC pattern with a jack blade and want to keep an eye out for one I like, but can’t for the life of me figure out how people find out.

      @@JayM-wg7dd just Google Gec knives and there website will come up and it gives all that info on there.when there making one you want send an email to Mike and he keeps a list and the first in gets depending how many he gets.👍☘️

    If you have a 17-degree set edge grind on your blade and put a 25-degree, secondary bevel on it makes the edge stronger and lasts longer. It still cuts fine unless you plan doing brain surgery. The basic Mora Scandi edge flat grind is about 24-degrees but Mora knives come with a micro bevel on their blades likely about 30-degrees and they cut wood without tearing the grain from out of the box. I wonder why people mess with something that works just because some think they know more, and don’t.
    What is the reason for buying a knife that forms in your mind? When you have little understanding of knives, it is the looks. Pretty knives and different blade shapes are designed to sell. As you, learn more from reading, watching videos and using knives your knowledge forms. If you believe, what others tell you are often flawed by opinions not facts important to you.
    Knife crazes come and go, like the wind. You learn from the mistake of following the herds of people taking the bait that are fooled into believing what their told. Often you learn there is little different from knives you have already. You should soon realize that older brand models of knives hold their value over time for a reason. The main reason is their Pretty. ☘🥔🔪
