You're welcome! I'm pretty sure that's where the recipe originated. Guyana used to be colonized by the British and cassava eas so plentiful and cheap versus the meat the usually covers scotch eggs (meat was very expensive back then). So that's why I think they started using cassava or potatoes to cover the eggs.
Hey so i tried making this...😭 it came out perfectly up until frying...i tried the egg method and flour only...made sure oil was hot enough but as soon as i put it in it started to melt in the oil😞

Hi Matthew...love yr video....but the funny thing when i do mine with just the plain flour...it some how starts to lose out and separate in the oil when im frying....so i end up have to rolling it in the egg then fry.....so why is mine seperating off the ball when im frying...any idea 😩
Maybe you boiled the cassava too soft. Also just dust it very lightly with the flour then fry. Also only use a nonstick pan or carahee. Don't use a stainless steel pot because it will stick
@@mirandawalcott8450 oh no. That's a bit weird. Maybe your cassava is too soft when you boil it. It has to be a little firm but at the same time fully cooked.
I do not like the batter because it makes mess and allows it to soak up more oil. Also I find when you do egg and flour it becomes too heavy too. Just flour works well.

I roll it in lil egg wash mix water and thrn breadcrums than fry it like that better than the batter ot flour. 😊
