Retired chef here. Been stung a few times by flaky bakeries. One of the worst was for a Mother's Day buffet with 800 reservations and my bakery order was a no show. 2 days later they shut their doors with no notice after 20 years in business and I had been a customer for at least 10 years.
"Ive just messed up hundreds of batches of dough.." Well, that's one definition for mastery. The willingness to try, to fail, to learn, & to work mean the rest will come with time. Deeply impressed by this guy.
What I love about all these videos is you get to see how much love and hard work and dedication this guy puts into every batch of bread he puts out.. He seems like a great guy. And there are a lot worse things to smell like at the end of the day. Also, walking past a bakery early in the morning.. mmm.. nothing else like it. The smell of fresh baked bread and sunrise.. sounds like a slice of heaven.
Honestly, 8 years, he has some experience. Good experience. But this dude has a hella talent. It's like, some people learn math, and their brains just click into warp speed. This dude learned to bake and he became the 21st century einstein of bread.

There is a chain of stores in the Bay Area that sells proper Philly cheesesteaks. I went in one and it was a slow time (between lunch and dinner), so I was the only customer and the owner happened to be the only employee present.
