It's Byron Berline (July 6, 1944 - July 10, 2021) playing the fiddle on this one, along with Mick Taylor who plays the acoustic guitar. Keith Richards thought Taylor messed-up the Hank Williams' honky tonk sound they were after for the song. The better known version (Honky Tonk Women) has Richards playing the electric guitar.
