- Chicken Sajji is slow roasted meat ,served with both delicious rice and fried vegetables .
Ingredients:
For Chicken Sajji:
1 whole with skin chicken (1.5 kg)
1 cup white vinegar
1 teaspoon salt or to taste
2 teaspoons black pepper
4 black cardamoms (badi alychee)
2 teaspoons dried pomegranate seeds (anar dana) or lemon juice
2 teaspoons cumin seeds (zeera)
1 teaspoon fennel seeds (saunf)
1 teaspoon coriander seeds (dhanya)
For Rice:
1 kg long grain basmati rice
6-7 tablespoons ghee or cooking oil
1 medium onion, chopped
4-5 cloves
2 teaspoons salt
1 teaspoon black pepper
4-5 stick cinnamon
5 black cardamoms
2 tabsp cumin seeds
1 tabsp jaifal javitari
5-6 bay leaves
FOR SAJJI MASALA
2 tabsp cumin seeds
1 tabsp black salt
2 tabsp coriander
1 tabsp whole black pepper
6-7 dried red chillies

Chicken with skin is a key ingredient in Sajji recipe… you can use regular chicken but the taste will not be same as compare to real Sajji ..
