Yes the burr will be cut but to me is easier to check for light reflection than feel the burr. Often I the past I just minimized it but not remove it from the entire edge.

Great video! The norton crystolon stone is a great stone for S30v, SiC does a great job on super steels with out the deep scratches of diamonds.

I use a diamond plate with soapy water finished with translucent Arkansas stone. A leather strop gives it tunes the edge.
