Not here to contradict anything. We boil between 2-5 dozen eggs a week and they are all farm fresh. The biggest thing we have learned. Is to definitely wait at least 3 days after the eggs is layered before hard boiling them. We gave noticed that rim temp is the best for sure. But we start them in tap water and once they start to boil we time them for 12 minutes. After that we set the pot aside until cool enough to peel. Never have a problem getting the shell to separate from the egg. We give them as treats to the chickens and the yoke part crumbles easy for the biddies to eat.
It’s been my experience that it’s a lot better to start your eggs off in cold tapwater then bring them to a boil, after the eggs are in the cold water and boil them for 20 minutes. Then like you did, put them in ice water to draw moisture back in the shell as they cool down and yes they will feel much better.
