AO3 doesn't save that information, an easy way to keep track is to add a note to your bookmark (in the text field when you make/edit it) where you write the chapter number.
I've been using AO3 for some years already but I never thought about organizing all my bookmarks until now. This video helped me to understand how it works so thanks a lot!!
If there is no button for the next chapter, it means it hasn't been posted yet. To be sure, you can scroll to the top of the fic where all the tags and information are, and see how many chapters are listed. Above that block, there are also buttons with chapter options that may be helpful ("Entire Work"/"Chapter by Chapter", "← Previous Chapter", "Next Chapter →", "Chapter Index")
Does the bookmark not mark the last chapter you've read? Do you know how can I find that information?

How do you make your own collections??
If you go to your dashboard, there is a page for collections on the left side menu. From there, you can create one :)
