Today on Hit The Kitch, Molly shows us how to make buffalo wings. But these aren’t any old buffalo wings. These are grilled buffalo wings, topped with an herby and bright scallion cilantro lime salsa, and served with a scallion cilantro ranch for a certainly NOT boring kick. And because there’s nothing worse than dry chicken, you’ll prep them in a super simple buttermilk brine and cook these wings over medium heat to ensure they stay tender and juicy, with a caramelized and crispy finish. Make no mistake, we’re having fun today.

Ingredients :

1 bunch scallions
1 bunch cilantro
3 limes
PANTRY
Kosher salt, freshly ground black pepper
¼ cup olive oil
⅓ cup mayonnaise
⅔ cup Frank’s Red Hot Sauce
Pinch of sugar

2 tablespoons unsalted butter

This approach was amazing. The brine was perfect. I upped the salsa with a little garlic, crushed red chile flakes and a touch of honey. And I punched up the ranch with some garlic powder, onion powder and a little msg (come on, read the label for ranch dressing). Ummmm, chicken wing deliciousness.

I’m on board for the brined, grilled, & Buffalo-sauces wings. But I’m a blue cheese fan, so I’ll go that route. I realize blue cheese is something you like or don’t like; very few people are neutral on blue cheese.

Best wings I've ever had was at a BBQ and RV park in Davis, Oklahoma. I asked for hot links, but the girl taking my order was deaf and thought I said hot wings. So I got wings that they smoked, then tossed in sauce, then grilled for a few minutes to get some carmelization. Holy shit.

I dont see why not but you have to figure out the temperature on your own because i dont think you would need to go for 400 if you're cooking in the air fryer.

Molly, I think you are a fabulous chef with some fantastic recipes. It really amazes me that you are using Hellman's mayo over Kewpie or even Dukes. It's time to move on to a better mayo.
A lot of people find Kewpie and Dukes to be too rich. Hellman’s is Ina Garten’s preferred mayo and it was Julia Child’s as well. Stop mayo shaming!
