This is quite interesting.....I'm from Patiala and have never in my lifetime heard Patiala chicken tikka to ever exist. Even if it does, it's probably not traditional because there ain't no way a traditional local food would fly under my nose like that......
Its because india is a tropical country. When meat was cut,it spoiled fast, it was immediately wrapped up in spices,oil that increased its shelf life. Our herbs are very aromatic. In cold regions meats are cooked with less spices. It was kept buries in snow..in winters people survived only on meat. Plains had more vegetables,crops

Indian Food is so underrated here in the US. I didn’t try it until I was about 28 years old, now it’s prob my 2nd favorite type of food. Esp when you’re craving it, mannnn does it hit the spot.
Dude this why I've been telling my friends, Indian cuisine is TOP TIER bro. Look at the amount of diversity between each dish. And the fact that they don't let any of those bountiful flavors go to waste is just something else entirely, cause other restaurants don't think of drenching whats remaining of the raw ingredients ( that weren't cooked, and left as remainders) on to the finished product to retain that fresh flavor from not just the finished ingredients but also from its raw counterparts.

As an American, I need to ask, why does all of your food look the same. Meat smothered in red-orange spices and naan. Like, I could make meals for a month without anything looking the same.

Even in this video he states the restaurant is a modern Indian restaurant. This sort of implies that the more traditional and varied dishes that look different, won’t be served or at least, as popular. I wish all types of cuisine has more variety to show to the world! When I cook at home I also try to not make every dish look the same, but when Vietnamese/Asian food gets posted online on what’s popular and such, I can’t help but also just see the same things! Noodles, rice, sweet and sour sauce everywhere, all foods looking the same which unfortunately doesn’t show the reality of options Aside from this, all cuisines work with produce, grains, herbs and spices that were indigenous to the area or eventually adapted to, so it’s quite common for Indian cuisine to be chopped down to the chili turmeric looking sauce with naan just cus 🤷🏻♀️ Anyway hope that helped (:

I'm Mexican and the last dish reminds me of one that we have called chicken mole. It's chicken that is cooked and simmered in this dark pasty sauce until it's so tender that it falls off the bone, and it's usually served with flour tortillas (which is essentially naan), and maybe some Spanish rice and beans. It's amazing and that looked amazing too.
There is a lot of overlap of Indian food & Mexican food.. after all India got tomatoes and chillies from South America. Ingredients like Cumin & cilantro are common to both.
Hi, I'm an Indian, and I'm glad you liked your Indian food experience. I just wanted to add - I have a friend who's a Parsi (Indian Zoroastrian), and I've eaten a version of Salli Boti at his place, which consists of apricots added to the gravy (you would call it 'curry'). It definitely tastes amazing; do check it out - it's a very traditional dish in Parsi cuisine. Also, if you ever come to India and decide to try Parsi cuisine, be sure to check out the restaurant 'Jimmy Boy' in Mumbai - it's a local food institution in itself. Bon appetit!

Also their Jackfruit Khadi is just amazing. I never had jackfruit khadi until then in my life, and after eating at Gazab for the first time, fell in love and tried it at several other restaurants, but nothing beats the one at Gazab in NYC

The Indian food content you may be exposed (since it’s on the rise of popularity) are prob going to be the ones that look the same or similar!
Even in this video he states the restaurant is a modern Indian restaurant. This sort of implies that the more traditional and varied dishes that look different, won’t be served or at least, as popular.
I wish all types of cuisine has more variety to show to the world! When I cook at home I also try to not make every dish look the same, but when Vietnamese/Asian food gets posted online on what’s popular and such, I can’t help but also just see the same things! Noodles, rice, sweet and sour sauce everywhere, all foods looking the same which unfortunately doesn’t show the reality of options
Aside from this, all cuisines work with produce, grains, herbs and spices that were indigenous to the area or eventually adapted to, so it’s quite common for Indian cuisine to be chopped down to the chili turmeric looking sauce with naan just cus 🤷🏻♀️

Please try and explore more of south,north eastern food...you will find unbelievable range of varieties

I'm Mexican and the last dish reminds me of one that we have called chicken mole. It's chicken that is cooked and simmered in this dark pasty sauce until it's so tender that it falls off the bone, and it's usually served with flour tortillas (which is essentially naan), and maybe some Spanish rice and beans. It's amazing and that looked amazing too.
There is a lot of overlap of Indian food & Mexican food.. after all India got tomatoes and chillies from South America. Ingredients like Cumin & cilantro are common to both.

Hi, I'm an Indian, and I'm glad you liked your Indian food experience. I just wanted to add - I have a friend who's a Parsi (Indian Zoroastrian), and I've eaten a version of Salli Boti at his place, which consists of apricots added to the gravy (you would call it 'curry'). It definitely tastes amazing; do check it out - it's a very traditional dish in Parsi cuisine.
Also, if you ever come to India and decide to try Parsi cuisine, be sure to check out the restaurant 'Jimmy Boy' in Mumbai - it's a local food institution in itself.
