      Using just pepper an kosher Salt 20 % kosher salt to 80% pepper will leave a good Barke .

    Slow n sear xl costs sumthin like 150 bucks... its basicly a thing that holds your charcoal on one side of the kettle. Being that its steel it propably makes them burn a little longer BUT you can bank your fuel on either side of the kettle and it will stay there! You can use aluminun pan or buy a pan pizza ring for 5$ or buy actual drip tray for 20$ and fill it with water and put it next to your fuel that is banked on the side of your grill, light the coals and you have slow n sear setup without buying a 150$ holder for your coals.

    Brother I got my 26” last year because of one of your videos and I have been so happy. I had the 22” for a few yrs, great grill. But the difference in the cook!! It’s amazing. It feels like more “freedom” to grill. It really open things up! Thanks man!!

      It depends on what's in the case. I like baby backs because they are easier to work with but they have been so lean at times that it was hard to smoke them without them drying out...on the flip side, Spare ribs aren't as lean but they are often machine butchered just terrible so it's a bit of a trade off. All of them are great though.

    Justin: Sorry if you've already covered this somewhere else (and I'll keep looking), but I added a 26" Weber to the arsenal recently, and trying to decide if I need the SnS XL? It doesn't look *that* much bigger than the deluxe, and the reservoir can't be removed. I'm wondering if there would be a buzz-killing drop-off in efficiency? The potential of having to add more fuel once isn't a big issue for me (thinking Brisket or Butts, used to it if/when wrapping to be safe), but if you've experimented with this and have any words of wisdom, I'd appreciate it. I'd prefer putting the $50 difference in the SNS XL towards a bigger brisket on the 26". Thanks and take care!

    I absolutely love that color on that kettle Justin! Hoping SnS makes a 26” some day and offer other colors! I like the battle ship grey but man “Ricer Blue” would be spectacular!! Ha ha you need an electric fly swatter, helps keep thin thin out the flying insert population!! Great looking rib bro!!! Smoky is going to be a great taste tester!!

    I would love to hear your opinion on cooking some big meats like a brisket, or pulled pork or ribs, on the smaller kettle? (for us it's the 57cm, I think it would be the 22inch for you) as I notice the 57cm kettle tends to have a lot more accessories (such as rotisserie) made for it that you can't get on the bigger model

    I hope you can help me with this question. I have a 26 kettle and was wondering how can I set it up to run at 325-350 without a slow n sear. If you have any ideas to help me I greatly appreciate it. You might remember me on my channel smokin hams bbq. You called me almost 6 years ago and said the 26 was the best smoker to go with and I finally got it. I just found out I have heart trouble and want to try to enjoy cooking with my daughter. It’s tough but it’s what brings that happiness. I would get a slow n sear but money is tight so just trying to get it figured out

    You should try the B&B charcoal from Academy. It burns much hotter, cleaner, and longer with less ash.

      Try Jealous Devil's new Pillow Briquettes....OMH....they are BIG....did an 18 hour brisket cook on my PBC (full basket) and never had to add fuel......low ash, solid, and burns super hot and clean.....and almost zero broken bits in a bag.....I will never use anything else again, truly.

    Do you always use Kingsford briquets in your Webber grills? Have you ever used Hardwood lump charcoal? I did my first rib cook ever over 4th of July, they came out really good, I used a hardwood charcoal and I lost the fire half way through the cook. I wanted to use the hardwood charcoal because I wanted to impart that flavor instead of the Kingsford flavor. What are your thoughts?

      This is a big topic. After years of using pretty much every brand I can get my hands on, I like quality lump (which few manufacturers make consistently) and Kingsford Competition briquettes best...mostly because it's consistent, lights fast, and doesn't spark or have any weird smells. I'll use anything though.

      @@BabyBackManiac Thanks for the thoughts, I beleive since I am using a low quality lump charcoal (bought at walmart), that I will mix kingsford and lump in a 50/50 mix to get the results I am looking for. I did not think about "quality" being a factor in lump charcoal as I thought Lump charcoal was quality. I guess I was mistaken.

      It's not your fault for thinking that. It's a very misunderstood and inaccurately marketed product. In reality, it's only as good as they people making it and the effort and source materials they have to do it.

    Do you use the slow and sear or the weber baskets when grilling on the Summit Charcoal Grill???

      I use a Slow 'N Sear low profile which was specifically designed for the Summit but is no longer in production unfortunately.

    I mostly smoke butts and spare ribs on my 22" weber and considering the 26". How much more can I get on the 26" over the 22"?

    With my SnS, all my coals eventually get lit and the temp runs away on me. Do any of you have this problem? Probably means I have an air flow problem. That’s why I moved to a dedicated smoker (Ok Joe Bronco).

    Question: have you compared rhe lid dial temp to having a thermometer on the grill on the vent side? It looks like the lid thermometer is over the slow n sear so it might be hotter than the grill?

    Please convince SnS to come back with their model for the Summit Charcoal!
    Also, when you get a new grill, do you recommend a burn-in period to combust any residues prior to cooking meat on it?

      Yes it's a good idea. Not as big a deal here because the cooking grate has been used a million times but definitely not a bad idea. Regarding the Summit Slow 'N Sear...Send SNS Grills feedback at info@snsgrills.com for product requests. They listen to their customers.

      I just contacted SNS myself with an email. I believe the SNS were available during or just before I purchased my Weber Summit Charcoal Grilling Station, and even though I got a bit of a discount at the time from the owner, I spent the extra money on other accessories at his store. Wasn't ready back then.
      Justin is quite the salesman.

    Justin.....I am really having a hard time trying to decide on either a Weber 26" or a SnS Kettle.....help me out here....if you only could pick one between those two what would it be?😟

      I would rather have all the features of the SNS Kettle in the 26 and I'm desperately hoping Dave makes one one day. I love the space of the 26 but after using the SNS 22, it feels like a trade off of space for features. I know that's not helpful. I use both every week and I think you'll be happy with either.

I'm leaning for the SnS Deluxe Kettle......but I get size of cooking grate.....I have a family big of 7...so cooking chicken wings on a 26" is preferred...but having a smoking port/hole, probe hole, and the vent and temp gauge where they should be is more of a pull.....I guess I can get the 26" later.....or wait to see what Dave does while using his 22" but I am afraid my wife will divorce me if I get another grill....lol

      @@karatevideosandmore7685 if I had a family of 7, I’d get the 26 with the xl slow n sear...or maybe 2 sns kettles. I don’t think one 22 will be enough on steak night...especially if the kids are older and/or have friends over.

      In short, The Summit is a nicer grill with more to like but the 26 with SNS is bigger a much better value for the $.

      26 unless you are going to need to do 2 briskets at once. Otherwise, the 26 w/ Slow 'N Sear is more versatile and is easier to clean and handle.

    I modified mine with some white steel wheels and new wood handles. Now it's too pretty to cook on! So I might need to get a second one down the line as a cooker lol (Ribs look delicious BTW!)

      Not really. I'm sure you've heard the same rumors I have. Basically a stripped down version without the gas assist for $999. I've not heard anything officially.

    I decided for Glen blue, bought as soon as they were in stock. Love it, I don't even use 22 anymore. One hot dog, fire up the 26er.

    Why do you have the aluminum pan in there if you don’t need it for water? Is it just to catch the drippings?

      Yeah, I guess I could make the case that it forces more air through the coals but I do it mostly for easy clean up.
