    For those interested, Tujone is allowed in the European Union within the limits of 35mg/l for Amari and 10 mg/l for liqueurs. Curiously, absinthe was forbidden in Italy only in 1939, it was always allowed, though, in the various vermouths. The typical products by Martini, Campari, Carpano etc. still contain, and always have contained, absinthe in their recipe.

    For a small Distillery you know that's got to be a lot of fun giving a tour to three troublemakers like you guys .. the moment the still opened up all three of you guys were sticking your face in it.. and as a group you guys are a lot more adventurous with high-proof and flavors... in producing your own Spirits that's one of the things that I've noticed is that I'm a lot less critical of trying new liquors and things ..I wanna taste the mash/wash ..straight from the still .. there is just so many different flavors I think the good / bad aspect is not as strong anymore....except for malort and Baijiu

    I love absinthe! It's a perfect hot weather drink, when diluted. The herbal-anise thing is really refreshing.

    Thought I'd share this, distillers might be interested at the end.
    I learned from the Obsello video "Absinthe: The Legend of the Green Fairy" Absinthe (the cheaper drink) out sold French wine sales by 1910. The wine industry stepped in and drove Absinthe out world wide by 1915. This might be the what and how that started all the stories and myths.
    I do remember learning years ago how a lumber company went to war against a plant that could out produce wood pulp for paper on an almost 100:1 ratio. Now Obsello.com is up for sale. Even Wikipedia is considering deleting it's Obsello Absenta page. Makes one wonder, but the guy who co-created the Obsello Absinthe is still around even though Obsello is out of production, he's still doing his thing.
    Bryan Davis was the co-founder and distiller of Obsello Absinthe, he has his own Distillery in CA. and has developed/invented a new way of aging spirits.
    "As of 2016, the Davis method of aging spirits is only used by a handful of producers. However, it has been widely speculated that Davis' invention may ultimately revolutionize the spirits industry."

    Not sure what she is trying to say but it definitely makes you see things. I drank it on accident, didn’t know what it was. I noticed the edges of plants glowed green. I didn’t make it up because I had never heard of it or it’s effects before.

    I love absinthe and I love chartreuse, pro-tip: add some green chartreuse to a bitter absinthe and prepare to your liking for a cheerier character.

    Ok Jesse I've wanted to try it for years, and now you have put it back out there for me man. Just not to sure on what brand to get though , seems like... green fairy is all I can get around here though so anyone know if it's a good 1 to try or is there a better 1 to try first.

    I think the hardest part about making it will be getting good quality herbs, particularly the Artemisia Pontica. It's grown as an ornamental, though, and you might be able to track it down. I guess you could actually grow everything you need in NZ's climate, excluding star anise which is a controversial ingredient in absinthe anyway.

    absinth is the reason why i became a stiller, developed my reciepe from swiss reciepes, bet I leave out the fennel/anis tasting herbs. absinth has man herbs in common which are used in gin, but the mainingredienst are different. I added some plants like the fresh needles of Picea abies and Elderflowers. A good Absinth is medecin.

    Man I had a deep love affair with the "green fairy" (not the brand) for the longest time. Then the deeper I went the more I realised that no matter how much you spend on a bottle of Absinthe, no matter how deep into Romania you had to go to find it, they all just achieve their head spinning effect with super high alcohol content, not with a high wormwood content. Cant wait to see what you do with it because I have often wondered about making it myself and where I live wormwood is easy to grow.

    I wouldn't say I "love" absinthe, but I like it. I like black licorice and I believe the stuff Trader Joe's is selling is from the same place in NZ that you mentioned. One thing about Absinthe is that it coats your tongue to the point it's hard to taste anything else. It is POtent!. She kind of danced around it but St. George Spirits in Oakland, CA is the folks who spent the $$$ to prove that Absinthe was not dangerous. Also you do not have to drink it straight, there are a number of classic cocktails that use it to good affect.

      If St. George spent the money, that'd be news to me. The peer-reviewed study that was published and proved to the TTB that there was essentially no thujone in properly made absinthe was conducted by a team which included Ted Breaux of Lucid and Jade Liqueurs. pubs.acs.org/doi/full/10.1021/jf703568f

    I just make a "tincture" from wormwood blossoms (Artemisia absinthium) using a juniper heavy gin and add a touch of sugar syrup an dash of salt. No distillation and it is for medicinal use. My opinion, wormwood is a medicine and it is just fashionable as a beverage. Still, and again my opinion, it should be classified as a drug. It is more addictive than mere alcohol.

    I love the process of how absinthe is made, but I think if I drink it now my body will reject it entirely because of that ONE night I had 5 shots of it back to back on top of already having drank heavily. Just to put it *very clearly... NEVER DO THAT, I WAS LUCKY AND SURROUNDED WITH PEOPLE TO HELP ME AND EVEN THEN IT WAS VERY BAD.*

    With there green absinthe after the second teabag do the distill it again or just filter to keep the color?
    Sage has more psychotropic things then wormwood? And I can see sage growing out my window 😈

      No filtration after the second maceration, just proofing and bottling. If we distilled it again it would lose its color. There's nothing psychotropic in sage, or wormwood. Thujone is neurotoxic, but not in the minuscule amounts found in absinthes and other beverages.

      Nope. It's a liqueur. If it were being introduced to the American market today, it would probably be called a 'German amaro.'

    Absinthe is one of those things that people drink for the ritual and the mystique. The stuff tastes terrible. So does basic moonshine IMO. I'd much rather drink pure grain alcohol. Artisanal whiskey is by far my favorite. Really good home distilled grain spirits and oak. That's the water of life. Grappa aged with wood is pretty great too.

      I actually wish it didn't have the mystique. I think the association with goth weirdos is a big part of what keeps absinthe a fringe drink.
      How does oak aged grappa compare to most grape brandies? I haven't had much grappa, but I'm a big fan of pisco which is pretty much the same as whole grape grappa.

    I'm in Texas and would love to buy the things this distillery creates; but, due to the absolutely idiotic multi-tiered alcoholic beverage distribution system in this country, I can't get it where I live unless a wholesaler carries it, who has contracts with a distributor in my area who will carry it, and retailers who will carry it... And with non-name brand stuff where sales will not be high especially at first, it takes quite the alignment of the stars and moon and enthusiasts more interested in the craft than the $$ to get this stuff on shelves without case lot purchases. Same situation with craft beer, come to think of it.
    Insanity. Almost like they don't want us drinking hooch, eh?

      For a beginner like yourself, I recommend La Clandestine Suisse Absinthe, the stuff is very mellow and has quite an appealing flavour. Remember this is absinthe, not absinth so you want to use water and a sugar cube.
