    I've been sharpening my own knives on whetstones for the past year. I was just creating a a burr on one side, then the other, and then moving onto a less coarse stone. I didn't know that you should keep sharpening it on the the coarse stone with less pressure after forming the burr on both sides. I learned something today!

    Great finished job on those Kyle and a great tutorial on sharpening. The Kai Shun Santoku is a great knife, I have one. It is the only Kershaw brand knife that is made in Seiki, Japan.

    Nice video. Your skills are impressive. Regarding your store, it would be helpful if you could give a bit more information about the dimensions on all your different models such as blade length and weight. I'm very interested in buying one but not sure which model would suit me best. BTW, your cat is awesome!!

    Fantastic job as always, what kind of compound are you running there? I've had the same 3 bricks of Woodstock for years(red, green, and white) but the green is finally down to it's last little chunk now which will likely still last a while but I don't like to run out.

    I have one of these Shun knives and it's one of my go to in the kitchen, a gift from my culinary mother on my 30th birthday. It's an amazing knife if properly maintained.
