A trick I usually use to know when to pour in the yolk+cheese mixture is, when there is no sizzling sound when you transfer your pasta into pan. So the egg won't turn into scrambled egg. Thanks chef!

i've used duck for aglio olio to replace bacon before, but i've not tried it for carbonara before. shall try some time! besides pancetta, i think guanciale is also typically used for carbonara, it's cured pork jowl. chef sherson, in your opinion why just parmesan instead of a mixture of parmesan + pecorino?
We use smoked duck to replace anything bacon in the restaurant :) I wanted to use pecorino cheese as well but I couldn’t find it in the grocer, and hence I thought that if I can’t access it easily I guess my audience wouldn’t as well. So I decided to keep it to just parmigiana, though I agree with you that with mixing both it’s definitely going to be better :)
Yo Chef and carbonara is traditionally made with pecorino Romano and or a mix of carbonara/pecorino. Pecorino because of its natural saltyness and its from sheep not cow. And for pasta look out for a Bronze Cut ( means rough edges so the Sauce Stick better to the pasta). Good Job Chef 👍🏻

Original Roman recipe uses Guanciale and Pecorino cheese ...what is equivalent to that in taste? It is the cheek of the animal.plus sheep cheese.. Perhaps a combination of smoked halal meats will create that flavour profile...maybe use turkey with the ducķ and some other fat too, such as a little lamb fat...? Very nice video.
The meat for authentic carbonara would be guancale, not bacon. That being said, I think smoked duck is a great alternative for a halal variety. Guancale is very fatty and rich in flavor. It's obvious that you know your stuff. Great video.

For anyone that say Carbonara can't be Halal it can you just have to substitute it with beef and best to get beef cheeks because guanciale IS pig cheeks
I came searching for copper and found gold! Im expecting some analysis of various I pork replacement or smth, but no, you are a fucking genius! I do eat pork but its harder to find here in Indonesia, which is fair, as ae are a musl majority country.. i only get to buy pork when im near places that do sell it, and the fresh ones are less available near me, i only get them when im near the store thaat do sell them and when not going out with muslim friends (or going home after hanging out with them), freight itself from the stores across town could cost as much as the pork itself... Duck is more available around me, might try this occasionally when i ran out of pork in my home and wanted to cook my favorite recipe :)

Looks delicious sherson. But the proper carbonara is using guanciale (cured pork cheek), not pancetta. And is using pecorino, not parmesan. Other than that, it's a great recipe. 👍
We know thar bur are people on this world that dont eat pork( im talking abour us muslims but also other people who are allergic or dont like pork). Also duck breast is very very nice for the fat needed for carbonara. About the cheese actually original carbonara uses both cheeses parmiggiano and pecorino romano.

The Italians really use the "Guanciale" (the pig's cheek) and it is with what the original, the authentic Carbonara recipe is made and it is also what gives the taste, the original flavor of a Carbonara. @@ShersonLianTV I'm German. So I couldn't give you the real answer, but I'm pretty sure it's the 'standard' unsmoked version.
Guanciale is traditionally unsmoked but cured with Black Pepper most of the time. Greetings from a Part italian from also germany.✌🏻️

Esam, yes Guanciale it's used but due to geography and ingredient accessible reasons, NOT all the place got Guanciale, and it's EXPENSIVE.
