Fusing with Kami to become "the Namek" and temporarily surpassing Super Saiyan Vegeta. And discovering Imperfect Cell and his capabilities. Battling Android 17. Training Goten and Trunks to master the Fusion Dance to defeat Majin Buu. And overall being the best father figure/guardian to child Saiyans everywhere.

If they do some sort of time skip in dragon ball super 2, they should make piccolo great again, for example piccolo studied how goku and the others use this god ki and so he observed and learned how to do that for himself, then also gohan taps in to it aswell with eyes similar to a super saiyan god, the hair is the same like his ultimate form but his aura is godly and mixed with his ultimate form, he also gets slimmer.
Y'know even though he couldn't keep up with Goku or Vegeta, he's still a phenomenal martial arts teacher with a big heart (even if he's hesitant to admit XD)

He admits to it that he no longer could take on buu, hense mystic gohan being stronger by a large margin for that time period.). But hey, we wont be getting that anytime soon (As in the development and spot light to piccolo.)
