Really? I dont think Stretch upstaged Archie one bit. Archie and Edith remained the main attraction for me the entire run no matter who costarred.

Who but Stapleton could have carried off this role? The late Gracie Allen maybe, but Jean stayed in the role without fail.
It's quite striking to hear Jean Stapleton (as herself) talk about the role. I would guess someone she knew (or was related to) inspired her characterization, but I'd love to see screen tests of various actresses making such a period character come to life (as Jean Stapleton easily did) - and have it be memorable. I didn't see the 2019 special with Marisa Tomei as Edith and Woody Harrelson as Archie. Maybe Eden Sher could have pulled it off, but portraying the subtle idiosyncrasies with ease might be quite a task.
Sometimes character Edith would let the audience know, there's someone smart beneath all this. I'm reminded of the time she voted against the bigot Archie was supporting, and didn't let on until last sentence of the show. Some times there does seem to be hope for society.
