- Carrot cake ingredients:
- 3 eggs
- 1 tsp vanilla essence
- 1 cup caster sugar
- 1/2 cup brown sugar
- 1 cup melted butter
- 1/4 cup vegetable oil
- 1/2 cup buttermilk (milk and 1 tbps vinegar)
- 2 cups all purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon powder
- 1 tsp salt
- 1 cup chopped walnuts
- 2 cups shredded carrots
Cream cheese frosting:
- 500 grams mascarpone cheese
- 200 grams cream cheese
- 3/4th cup icing sugar
Alternative cream cheese frosting recipe:
- 3/4th cup butter
- 1 cup cream cheese
- 3/4th cup icing sugar
