I just bought one of these and not sure if this is right or not, when I unlock the thrusters one just will not cut off unless I lock them again is it supposed to do that?
Yes, it sounds to be behaving normally (motors/ thrusters trying to equalize themselves when underwater). Still, it is not recommended to turn on the motors/thrusters above the waters, as it may damage the motors long run this way if turned on too long.

My FIFISH v6 cannot connect to WiFi anymore? It used to be able to. Now everytime I turn on my WiFi, it turns OFF my 5G and I cannot run both at the same time anymore?? Why is this happening

Not sure if it was mentioned but your phone needs to have the ability to connect with 5ghz wifi as the drone doens't have the traditional 2.4ghz wifi.
So the grey model uses the app and the yellow one doesn't???
