The thin interfacing or canvas under the fabric is to give the edge of the fabric more strength so it holds its shape better when wearing or in general use. You can usually buy as a sew in or an iron on version. I use the 'iron on' as its easier. Its available in different thicknesses and usually in black or white, depending on the weight and colour of fabric that you're sewing. You can now also get stretch interfacing if needed for stretch or knit fabrics.
The white paper with the line drawn on it was to make sure that you get an exact 45 degree angle when sewing the corner angle. Hope that helps
