Meanwhile, I know suit and tie guys who are in the underground music scene, hit skate parks, and get arrested for what they believe in, who are 100x more punk than those who simply boguth the starter kit. This guy is punk, because he does what he loves and does it his way. And Hell, doing anything for the benefit of others (even if you get paid) is the most punk thing to do in 2023.

I live in an apartment in northeast Arkansas and my landlord recently installed a new stove for me. It is the same Amana stove that he has. It is the least expensive model that Amana makes but I feel much better about it now. I wish I could make pizza like he does but the stove is only one small part of the process.

Nothing compares to the pizza I ate as a kid in the 60s and 70s at Baldwin Pizzeria in New Jersey. The crunch and taste and oil dripping experience is forever etched into my soul. Slices were 25c each, and I often ate 2-3 of them after doing my paper route.

Amana is the oven company (founded in 1934 in Amana Iowa) that introduced the first consumer microwave oven in 1967 - the *Radarange*. (Raytheon invented the microwave oven in 1947, bought the Amana company in 1965 and used it as a consumer products brand name). Amana ranges were often prizes in game shows in the 70s and 80s. Now owned by Whirlpool.
That was pretty funny when he said he never heard of Amana and pronounced it Ah-mahh-na. I guess you have to be of a certain age. It would be great if this video touched off a wave of Brooklyn hipster foodies all trying to acquire 30 year old apartment grade Amana stoves.
Bronson trying to talk up the oven as something hard-to-find, but that's a standard POS apartment oven. It's amazing he's making pizzas that good out of an oven that can max out at maybe 550. He's using a steel and possibly broiling the pie to simulate a hotter oven. Disable the self-cleaning lock, and he could take it to a higher temp still.
Biggest tips I can give for trying to get pizza of this texture at home are: make your dough the day before, get your oven SUPER hot (we pre-heat our cast iron in there for an hour at 475 before putting the pizzas in), bake on the bottom rack if you're using pre-heated cast iron or stone, and learn how to transfer to and from your cast iron/stone. We prefer cast iron because it carries the heat better through multiple pizzas, I think. We do the transfer onto the cast iron outside of the oven because we are not experts and don't want to make our oven messy, but some might find it easier to use a peel and do it inside the oven because it's hard to handle the searingly hot, heavy cast iron. And don't burn yourself. You might not be used to the oven being that hot. A slight touch of anything is a nice burn.
Same process, but I think the dough is best 3-5 days in the fridge. Let it out at room temp for 3h before making pies. I bake on top rack on 1/2” baking steel, broiler on for first 2 minutes, 2.5 minutes more broiler off. Leopard spotted crust, a little more flop than this video but crispy and chewy. Definitely practice the slide transfer off a wooden peel with a good dusting of semolina. The key is to top the pizza quickly. You won’t make a mess as long as the pie doesn’t stick to the peel and this keeps all your precious heat in the oven. But as always do it as you prefer, keep experimenting and challenging yourself, this is just my process. Enjoy the journey friend.

Groing up in Brooklyn from 1970-1985, this one gave me the feels. So much of what we love, even a damn Whopper, is because of who brought us there as a child. I was once visiting Brooklyn (Sadly, I lived in Westchester and almost never went back) and was a a nice restaurant for lunch and I mentioned my upbringing and mention Queen Pizza on Court Street. This woman, who was as I am now (53) looked up and said "This guy knows his shit, get him a drink." We then had a conversation about all he neighborhood eateries in Boerum Hill, Cobble Hilly, and Brooklyn Heights (and some others) and how many of the new places spawned from just a handful of places only really Brooklynites remember. Action always captures this essence and it's much appreciated.
You know what you're going to get expectations met and exceeded with every episode. Some of the most incredibly crafted and cared for dishes on the planet with flawless production and creativity along with Action who continues to shine a beacon of positivity which uplifts those around him and highlights mastery in any field. Would love to come and take some photos of the event when it comes to my hometown, London!
Those pizzas coming out of that apartment oven look 100000 times better than any pizza I've seen at any pizza chain (Papa John's, Pizza Pizza, Pizza Hut etc)

Those pizzas coming out of that apartment oven look 100000 times better than any pizza I've seen at any pizza chain (Papa John's, Pizza Pizza, Pizza Hut etc)

wow that just looks effin awesome, but I'm sure it ain't the oven, it's Chris' dough, I get it the ingredients, the oven, and the steel plate makes a difference but if you don't have proper dough you'll never make a good pizza. I have tried every NY wanna be pizzas on TH-cam and never came close to what Chris Hansell is doing. Chris, please show us how you make your dough, I'll guarantee you that video would hit millions, cheers all :)
