    HOW TO SMOKE CHICKEN WINGS
    ______________________________________________________________
    WHAT YOU WILL NEED:
    - 1-2 lbs of chicken wings (whole or split)
    - Olive oil - amzn.to/2JxbdZg
    - Postal Barbecue Original Rub (or your favourite rub)
    STEP #1
    To prepare your Chicken Wings, begin by coating them with a little bit of olive oil as your binder which will help your rub stick to the chicken wings a bit easier. Once oiled, apply your BBQ rub to both sides of your wings.
    SETP #2
    With your Chicken Wings prepped, get your grill set up for cooking around 300F. Once it is up to temperature place your chicken wings onto the grill opposite the coals. Also, add in some wood for smoking (i used hickory) then close the lid and begin smoking your chicken wings for around 60 minutes.
    STEP #3
    After 20 minutes of smoking, open your wings and give them a flip. This will help give even colour and smoke distribution. Flip again at the 40-minute mark and continue to cook until it has reached your desired temperature. I like to bring my wings up to between 190-200F. Once they are up to temperature, remove them from the heat and dig in!
    That's it.. Now take a bit and enjoy!!!

    Those chicken wings looked amazing! I am shocked that the skin wasn't rubbery cooking at 300 degrees. I know you cooked them for time and 100% agree with cooking them to 190-200 degrees. I like my wings well done. Great job and huge fan of your station!

      Were they ever amazing! As for skin, usually 275F is the lowest you want to go to avoid rubbery skin. Give it a try and let me know what you think.

      Big mistake in cooking chicken too low. Too low and your wings will be like eating seasoned rubber bands.

      @@JasonXBeats I would bump up the heat 275-300 degrees and pull them off at about 165 internal. Then crank the heat up about to 400-450 until the crispness is to your liking.

    I have found, especially smoking at low temp like 250-300, oil only hurts getting that crispy skin. Try it without the oil sometime!

      Yeah in his method we are looking for soft bite through skin that isn’t rubbery. For crispy we usually push it around 400 degrees which does the trick for crispy skin.

    Question, I’m used to regular grilled wings and like to take them out at 170 so they’re still nice and juicy. I just ordered some smoked wings at a restaurant and it was dry. I could taste the smoke but really surprised me how dry they were. Reminded me of a deep fried wing that was fried way too long. Will a regular smoked wing still be juicy?

      The secret to chicken wings/ribs are to take them to 190-200. At that temp the fat and collagen melts and it makes it super juicy and fall off the bone. It's way better than 165 try it. Trust me, it is NOT dry.

    My one question is about cross contamination. You touched the raw chicken with your hands and then the oil bottle/rub shaker/tongs. Did you clean them off or did you wash your hands between shots? It may be something to talk about in future videos.

      Thanks man. Yeah I I’m usually try to do things with one clean and one contaminated. But when that’s not possible yes I get scrubbed up. It adds a lot of time with some videos but has to be done. You’ll sometimes notice a cutting board change as I have a couple of the same so I don’t have to wash right away. Cheers bud.

      I often rotate between cherry, apple, or hickory. Use what you like though.

    Didn’t work for me. The wing cooked up great and crispy but the sauce did nothing as far as coating the wings and the jalapeños ended up in the bottom of the toss bowl 😡
