Japanese food set menu course is almost like art and each small bite actually bring the taste of what it use.. I'm really enjoy my time when I was at Japan for a week.. gain almost 6kg.. but no regret since every food there is really enjoyable and fun.. wish covid gone so I could start travel again with my family..
It is so reassuring to me thinking of cooking at home that even a chef that is as high level as this one only peels shrimp one or two segments at a time as well. :)
That's how all food is treated in Japan, regardless of the price point. When eating in Japan - there's etiquette, technique, and/or utensils for nearly every aspect.
Using a sufficient amount of oil is what permits Tempura to cook quickly and evenly - without absorbing excess oil. When a large amount of food is added to the frying oil at once, it causes the oil temperature to drop - which results in food absorbing oil before the batter/crust sets.
*proceeds to eat however I want when I was told ‘Please eat it without adding anything’. Chef : "Emerge from the darkness, blacker than darkness. Purify that which is impure"

How about that u-ni taste? I heard that high quality uni has bright orange color. but that uni looks like a brick! The Restaurant is no doubt to say ‘almost michellin star Restaurant!
While that's true, this type of meal isn't something which is eaten every day. For most Japanese people, this type of Kaseiki style Tempura is regarded as a meal for special occasions or celebrations.

新幹線の車内雑誌で宣伝をよく見かけるので気になっていました。関東の天ぷらは素材其の儘が主流ですが、流石。手の込んだものですね!

You know it's expensive when there's instructions on the proper way to eat the food

Understand why tempura is one of the luxury dishes in Japan
It depend what you put inside and where you eat them. It's also a cheap dishe.
Wow!! 🔥🔥🔥
うまいそう!😋😋

How does the corn not disintegrate? Amazing.
Are there no one who commented about how much oil & how big the pan is, compared to the amount of the foods being fried 😌😌

try to make Tempe Tempura
I always wonder if we can call fried chips as potato Tempura
Are chips typically battered? If so, they might be considered Tempura. For examples, there's Sweet Potato Tempura.
Nice place but its not friendly for budget traveler like Me 🤣

I thought frying everything was an American thing
The Tempura frying method predates the founding of the U.S. In the 16th century, the Portuguese brought this style of cooking to Japan.
