More than the food, it is the culture of Gujarati dining halls that wins your heart.
There is an old Gujarati saying: "સુરતનું જમણ, કાશીનું મરણ"
Meaning, dining in Surat and dying in Kashi...(get you moksha).
BTW you should have asked the servers to use their own sign language.
Gujarati dining halls are famous for this: Every server will keep a track of your whole thali.
If any item is missing from your plate, the next server will make a hand sign.
Another server will rush to your table and start serving that item.
You will never have to look up and start searching around for a waiter.
Another feature is the hospitality of the "maharaj" (the head cook-cum-manager).
He will typically come over and fuss over you.
He may even insist that you try some of the items, or eat some more.
It really feels like eating at a dear friend's home!

You better visit rasthal in Baroda near the railway station where you can have more variety than sasuma and they invite musicians for the customer as well.

U people r not giving honest review. This thali is very bad. I have tasted the thali of sasuma .it is worst in the city. U should learn that it is not necessary to admire all the food . Give honest opinion.

thali should be filled with only lunch items, not snacks like, chat, samosa, dhokla, thali should not be mixed with b/f, snacks items, one sweet item is enough not 2 items, puri or phulka one item unlimited is enough, have reasonable tariff but limited items to be served. few are having too much of money, just wasting in these ways, which is not necessary. just food waste all over!!!!
