Muslim Style Mutton Pulao :
Yakhni is the Kashmiri word for mutton stock. So, this is really a mutton pilaf (or pulao) cooked in mutton stock. This takes a long
time to prepare but the taste makes it well worth the wait.

This is also called Mutton Yakni pulao .
While preparing the Mutton , you may get some whole onions or been sliced into big dices . That will make the stalk / Yakni more delicious.
some people prepare this without turmeric to avoid getting the yellow colour.
If turmeric powder isn't used , the saffron used gets more contrasting colour.
Generous quantity of Curd used during marinating the Mutton , makes the pulao taste more yummy.

During dum, first layer of rice will cook more than the top layer..Since the both layer of rice has been 50% cooked..

Looks yummy. Confusing since rice quantity is in kg and water in litres. If all measurements were in volume it would be nice. Can you give me rice quantity in measuring cups, pls?

Do not offend. I ate this kind of food only in my Muslim friends home and Muslims hotels. Experiencing this taste and texture food in my home its in my dream only. Though this mutton Pulav tastes awesome.
Shabaz Athar being a fellow muslim....I find yr comment over d Muslim cooking as over exxagerated. there.is nothing wrong.by mentioning Muslim related to something.non offensive such as food.
in my country too we also use Muslim style briyani....and many more......
