A really informative topic, my question is: Regarding the time from 3:00 a.m. to 5:00 a.m., what is the difference between lung activity when awake and when sleeping? Also, what is a typical breakfast “like a king” like?
1. For most of the lung time the lungs are healing, purifying themselves, etc. This is why it is generally toward the end of the time (usually between 4:30 and 5am) that one gets the gasp of air. At that point the lungs have finished the reset and are ready to take on the day.
2. Breakfast like a king usually refers to amount and highly nutritious foods. But, keeping a balance is important as well. A good example is a dim sum restaurant. These are massive breakfasts and also considered to be the social meal of the day. At those meals, usually there is always a congee, plus all types of meats, seafoods and vegetables, often steamed, and frequently in a dumpling or some other wrapping. They are a combination of easy to digest foods (easier for the stomach to handle a large amount), many types of foods (highly nutritious), and people often eat with friends and family, making it a longer drawn out meal, which helps with digestion.

So if 7-9 is fun time (heart time) - is that a good time to dance or do some cardio?
For sure. Anything that's not too mentally taxing. Dancing good, business lunch bad.
