    Ingredients:
    900 g minced meat
    250 g onion
    150 g carrots
    150 g celery
    15 g garlic
    250 ml red wine
    50 g tomato paste
    40 ml Worcestershire
    500 ml beef broth
    40 ml olive oil
    1 tsp black pepper
    1 tsp rosemary
    25 g flour
    200 g peas
    1.2 kg potatoes
    100 g butter
    120 ml cooking cream
    100 g Parmesan
    3 egg yolks
    1 tsp salt
    Instructions:
    Finely chop the onion, the carrots and the celery into small cubes. Heat the olive oil in a saucepan and add the chopped vegetables. Cook on medium-high heat. Put ½ tsp salt to release the juices and stir. After a few minutes, add the pressed garlic and cook for one minute. Add the minced meat (your choice of type) and mix it well with the vegetables. As soon as it is cooked and starts to stick to the bottom of the saucepan, add the red wine and deglaze (remove the pieces stuck to the bottom). Cook for a few minutes to release the alcohol from the wine and add the tomato paste. Stir well again and after two minutes add Worcestershire sauce, rosemary and black pepper. Stir and cook for a few minutes, then add the flour. Stir and cook until the liquids reduce and start to stick to the bottom. Then add the beef broth and deglaze again. Reduce the heat to medium-low and let it cook until the mixture thickens again, stirring occasionally to avoid sticking to the bottom. As soon as the dish thickens, remove from the heat and add frozen peas (maybe canned). Mix and transfer to a baking dish. Spread the mixture with a spatula to get a thick and even layer. Leave it to cool. Meanwhile, boil the peeled potatoes. I prefer to cut them in advance to reduce the cooking process. As soon as the potatoes are ready, mash them into a fine puree. Add the butter, cream, parmesan cheese and ½ tsp. salt. Mix and taste. If necessary, add more salt. Then add the three egg yolks and mix again. Carefully spread the mashed potatoes over the mixture in the baking dish. Make a second even layer. With a fork, make fringes over the entire surface of the puree. This will increase the crispy surface after baking. Place the baking dish on a larger low tray in the oven. When cooking, the dish will rise slightly and there is a possibility of spillage. Roast at 220C/220F for 30 minutes. Let it cool for at least 30 minutes before eating.

      По тази причина написах, че каймата може да е по избор. Все пак много хора не обичат агнешко. Алтернатива е телешкото месо или каквото човек си пожелае, защото исторически също се е използвало свинско и патешко 🙂
