I used to love canning when I was younger and raising a family . One thing I would suggest is leave about 1/2 inch of headspace at the top of your jars . I admire you that you want to can and do so many things that young people just don’t want to do anymore .
i also recently had a potato peeler accident, peeled a large chunk of my finger off 😅 it was painful and frustrating, hope your nail grows back swiftly

I had a small apple orchard (30 apple trees) at my last home. I always used my apple peels and cores to make apple juice, as well as apple cider vinegar. I also made my own pectin which was really cool to learn. Hope your finger/nail heals up quickly.
That is so cool that you know how to do canning. And as for cutting your finger with the peeler, yeah, I've done that - just a little cut. So every time I start peeling I have to remind myself to slow down so I don't do that again because I normally just want to hurry up and get things done. If you keep going with preserving apples, you might want to get a tool that peels, cores and slices all at once. Made all the difference in the world when I started dehydrating. Also, if you use WSU’s recently released apple variety Cosmic Crisp, you don’t have to worry about browning as much. This non-GMO variety was traditionally developed with Honeycrisp as one of the parents.
Hi Maggie, sorry to see that you hurt your finger, might I suggest that you wear a glove with Leroy, I've never canned like you do, i do preserves but don't pressure/water/steam can them, but I'm in England and the book i use is from the 1970, ❤

I bought a case of the 32 oz ball jars from walmart and intend to use them for sprouts and food storage instead of tupperware or plastic. I've been using some to put up about a week's worth of essentially vegetable stew each week now for about a month. One sesh prepping and slowly cooking or steaming. I don't use oil at all. I do add beans I've pre-cooked. Lots of variety. (I can eat almost anything since my colostomy! So happy about that and the fact that when I do eat, I get nutrition, not paIn.)

I am fascinated by pickling, preserving but only now in life seem to have time to possibly do. To protect edge of jar when putting in more chunky produce would a zip lock bag with bottom cut place in jar and zip ended folded over top of jar protect actual edge from getting messy.... Just a thought. My Auntie has awesome apple peeler device reminds me of peeling a pencil with bonus of long apple skins to dry out for a snack.... she also uses it on potatoes and again cooks skins for tasty snack x

I was just about to comment this! When I helped my mom can jam and jelly when I was a child. She always left about 1/2 inch, so there was no seepage.

If you are doing a bunch of apples the best thing to do is use a hand crank apple peeler. Makes quick work of it.
I took half my nail off with a knife chopping vegetables. I didn’t tuck my fingers properly. Took forever to heal and grow the nail out.
