Allulose won't crystallize when melted but erythritol will after it cools. Allulose makes the best caramel, smooth and silky. Try pure allulose for caramel next time.
Sorry, I just saw your warning note under your description. I see you discovered erythritol won't work. Erythritol works in cookies when you want a crisp texture. Allulose works if you want a cake like texture as it absorbs moisture, hygroscopic. Sometimes blending both works the best since allulose also browns so quickly.

It seems to have such a great texture for baking, I wonder how it would work if we substitute it instead of the almond flour, using Lupin flour in your perfected Keto Flour? 🤔 I am curious to know your opinion on this, I will try to experiment with that one because it just seems so good. Im curious if the filling thickened due to reduction or the 1 Tbsp VKF. Will the VKF thicken sauces like regular flour? Thanks and the pie looks yummy! Hopefully the seizures have subsided...been praying for you! 🙏

I liked the taste of the lupin flour, but it gave me diarrhea.

The egg also thickens a sauce but I have used VKF to make gravy and it does thicken

Is that an 8" or 10" cast iron skillet that you are using, Victroria?
Seeing that you now recommend all allulose now, do we need to increase the amount of allulose by 30% to compensate for the reduced sweetness?
No that throws the wet to dry ratio.
