I love TJ's tortillas for everything. When I lived in Echo Park I went to ELA seeking good tasting tortillas and didn't find any as tasty as Trader's. Good to see you doing enchiladas Scott.❤
Guerrero is better. I tried the TJ tortillas and they will never get Mexican food right. If you use a true Mexican tortilla, the enchiladas or any Mexican food for that matter will taste a lot better.

I think it's amazing that a person can live in a van that produces its own electricity, has its own running water and do your own laundry. A lifestyle that's not for everyone but it certainly is interesting.
A great use of stale tortillas is to cut them into wedges or strips, fry them until crisp for homemade nachos, and dip them in salsa or guacamole. Homemade nachos are better cause you control the salt content. But I prefer to cut them in half for a larger dipping surface.
Your dish looks excellent. Some of the sauce would be good to make NM style eggs, which are scrambled eggs with enchilada sauce mixed in. Had them on hotel once while visiting NM. They're delicious.

My enchilada sauce recipe comes from an excellent sante fe 14:35 cooking book. A rioux ( olive oil flour, garlic onion) cayenne pepper. Garlic , cumin. Oregano, salt and water. Very hot, but t here is nothing better.
Huh! My mom used to make, what she called, pancake style enchiladas. You're the 1st person I've seen make anything like them! Even the fried egg on top! And she was born and raised in Soccorro, NM! I had no idea they were called New Mexico enchiladas! Very cool!

I used to make my own also, which I learned from my Puerto Rican wife at the time. Thank you. Great ideas to experiment with the sauce. And don't worry about your haircut. Although there's nothing that grows out slower than a bad haircut, at least you don't look like one of those god-damned hippies. Kidding ofcourse because I was one of the original hippies from the late sixties, and still am.

I put a glass on the paper towels, tip the fried tortilla against it, and the oil drains off. I got a bag of dried ancho peppers yesterday. I grind a bit at a time in a coffee grinder when I want powder. Enchiladas, yum@

Very cool way to make enchiladas. I'll have to try the New Mexican style in near future. My mom would make the traditional South Texas style by light frying corn tortilla then using 1 slice American cheese and a couple of slices of sharp cheddar sliced into finger width slivers for easy rolling of tortilla but would add some chopped onions in the middle of the rolled tortilla before placing in oven. And you have a very cool way of turning your fry pan into a mini oven too.

Love the hair cut, shorter in the spring and summertime.I usually use a #3 and buzz it. Less shampoo use.
A great meal, and thank you for the tip in the powder spices. It's less messier than using dried chili's, toast them boil them, and then use blender.

I know it's fattening but I use Manteca to fry my tortillas. I can only find it at Target lately. Enchiladas sure look yummy😊
