Assassinations , They are essentially super human, and after they've killed a target they can get rid of the evidence by eating it ( That is if they have a large enough group of ghouls to completely consume a certain target...) maybe a less violent way of integrating them into society is if they become under takers and are te main ones tasked with getting rid of bodies... Cainmail is cut resistant while Gambeson is a impact stopping armor, therefore the bit will glide off and if it pokes through one of the rings it's stopped by the several layers of linen in the Gambeson (If I understood it correctly, that most of it is biting. First thing I would do is try every kind of raw meat I can get my hands on. There isn't anything physically special about human flesh that should make it a unique dietary requirement unless the condition itself is entirely supernatural rather than medical. Hell, porcine flesh and anatomy is so damn close to identical that we can actually transplant parts of organs from pigs to humans and even use their livers as a sort of bypass. If that fails I would look to see how hard it is to get a job either at a morgue or a funeral home.
If you read the manga, the only way to beat the ghouls is by becoming the strongest. Leading everyone to try to live together. Not all ghouls are insane, some people don't choose to be born one. All ghouls are born ghouls only in rare occurrence do they transfer from human to ghoul (Protagonist). The CCG stalks people to see if they're a ghoul, if the person is one. They kill regardless of gender or age. They have no sympathy for ghouls. The only way to "Beat" Tokyo Ghoul is to make everyone coexist. Because even avoiding the public eye, you'll eventually find yourself killed by the CCG; they don't discriminate with ghouls, if you're a ghoul you'll be killed no matter what.
