    Chicken Korma in 30 minutes
    150ml Oil
    Small piece of cinnamon
    1kg chicken breast
    600g Onions. (Boiled and Blended) As per video.
    1 Tin full fat Coconut milk
    3 tbsp garlic ginger paste
    2 Tsp turmeric powder
    4 Tbsp almond powder
    3 Tbsp Al’s mix powder or Mild Curry powder
    4.5 Tbsp Sugar ( Depends how sweet you want it)
    1/2 Tsp Garam Masala
    2 Tbsp Natural yogurt
    200ml Single cream
    200ml of the onion water
    1 Tsp Salt
    100g Creme Coconut block (Optional) Not featured in video. I run out. Add at stage 3
    Dried Safflower to garnish
    Note: Add some naga chilli or chilli flakes if you want it hotter.
    Note: If you want the flavour more coconutty, add 3 tbsp of Coconut milk powder at the "Make curry paste" stage
    Note: if you prefer to use Coconut milk powder over using Coconut milk in this recipe, just add 9 level Tbsp at the "Curry Paste" stage but you will also need to use 500ml of the onion water too"

    Not had a korma since the boil in the bag vesta's in the 70s.
    Your 30 min curries are a real godsend for quick midweek curry fixes.Mind you,i always batch cook gallons of the base sauce and have a fridge freezer in the mancave thats literally literally beer and base!!!
    Ive even thrown the base ingredients into a soup maker and boiled up the acni stock separately and rattled through that process in 30 mins.
    This korma looks great and intend to break my tradition and go 'mild' this week! Chunky air fryer chips and rice at the ready!!

    Made today and it was lovely, had it with coconut, pineapple mango rice. Sprinkled with toasted almonds coconut and chilli flakes. Going to be a regular.

    Al!! Hope you survive your flu! I like the 'Pride' brand of coconut milk: I now always look at the coconut milk content as some brands are quite low in coconut milk (guar gum etc) by percentage. Boy, that's a big pot!

    A good curry house near me, does a 'Sondia' dish, which is Korma with sliced with green chillies. So if you like a kick and a Korma, add some Chillies. A bad curry house near me uses desiccated coconut, never had it as I hate bounty bars, a texture thing.

    Cooked this tonight. Family loved it. There are layers of creaminess to this, but a good savoury background too. More of a chilli chicken man myself but this was really good as korma goes. Going to put a bit of Mr Naga in it later ...

    Excellent video and series, looking forward to making this one, i've already made some of the other 30 mins and have to say that it's the best tasting curry ive had that wasn't a takeaway , blows away the supermarket stuff. Could you recommend an alternative to almond powder as we nut allergies in the household

    Making this right now. It smells delicious. i don't add sugar but will check and if it needs a little sweetness will add some hot mango chutney at the end. Also adding a thinly sliced green chilli at the end.

    I was reading somewhere that there are many, many different kormas from different regions.
    What I'd like to see is a korma with plenty of heat, like the Indian equivalent of a Thai green curry if like.

    When boiling my onions, I add upwards of half a chicken stock cube and half teaspoon of my spice mix or garam masala

    Hi Al if you did want to use the coconut milk powder, how much would you use?

      A glass of coconut milk powder needs 2Tbsp so 400ml would need 4Tbsp but you may need more onion water as its less liquid for the curry

    ❤ how much coconut milk powder would you advise instead of the tinned milk? Also assume we would need to up the amount of onion water if using milk powder?

    I will be giving this one the taste test this weekend for sure. Just so that I have a mild curry available in my locker for the non spicy curry lovers that I sometimes have to cater for.

    Going to try this curry in the next few days. The coconut total content seems elusive. The block is mentioned but not sure it’s needed with the milk/milk powder. Last time I used block format it was rancid tasting :/ Should the canned milk suffice? Plenty of almonds and cashews are going in for certain! Cheers

    Made this for dinner this evening, the whole family loved it, tasted as good as any restaurant korma.
    Only suggestion is it was a bit too oily, ill drop to 80ml next time i make it :)

      I used the powdered coconut milk, the taste was excellent. Don't think I'll ever use the safflower as it is expensive and doesn't add to the taste as Al stated.

      I bought mine in Turkey where they call it safron, it really is as cheap as chips! I believe Amazon do it now on line. The red colour just bleeds into the yellow of the Korma it looks spectacular. I also added a few flaked almonds - a magnificent dish!

    There's a couple ways I know to get a pretty good BIR Korma, surprisingly (well to me anyway) both routes use different ingredients, either way, my favourite is to add some slices of banana towards the end of cooking for my rendition of a Kashmiri Korma, just about any fruit works really.
